Good Morning Everyone,
I am up early to get to my AA meeting.  Then, I have to run to work and run some papers off for this weeks unit.  We are studying Juvenile Justice, and it coincides with Constitution Day on Wednesday.  I teach 7th grade Social Studies.

After work, I am hoping to get in a walk if I don't walk at lunch time.  Then it is home to knit, as I must finish that baby blanket in time for a special fundraiser in October.

Stay cool.

Huggles,
Trish

Good Morning Trish and Pa!!

We didn't go to the in laws house yesterday....but I have a feeling we may end up over there for a quick visit early this afternoon.

I have to call HR at LVH to finalize everything - I will update a post depending on what I find out.

In a few minutes I have to run to the grocery store and pick up some fresh berries.  I am making a pie for a co workers bday party at work Tuesday night.  She is a "new" diabetic (about a year or so) and she has been soooooo good at changing her entire lifestyle, and eating sugar free items.  When we were planning the party everyone didn't know what to bring in and looked at me and said "You eat sugarfree things - can you come up with a dessert for us?"  Although I have not made a sf pie - I am revamping a recipie and think it should work fine.

I ended up not doing much of anything as far as straightening up yesterday - I was pretty beat from my crazy schedule last week and just took the day to "veg" if you will - and it was lovely!!  Hubby and I watched a bunch of medical shows on TLC which were all quite interesting.

Then, it will be back to work tonight!

Pam - I made 2 sugar-free pies for work today - one was a strawberry cheesecake pie and the other is an Oreo pie. The pie crusts are store bought and NOT sugar free, but very low in sugar per serving (even I can eat them).

I used the sugar free cheesecake Jello pudding - 2 boxes + 2 3/4 c 1% milk - stir until it thickens then pour into piecrust. Then I sliced strawberries and arranged them on top.

For the Oreo pie I bought an Oreo cookie pre-made crust (even lower in sugar than the graham cracker crust), then I used 2 boxes of sugar free vanilla pudding, 2 3/4 c 1% milk and mixed in crushed sugar free Oreos (oh yeah, they make 'em!) - poured all that into the pie crust then topped it with more beat up sf Oreo cookies.

Now I've had the strawberry cheesecake pie and its yummy - the Oreo is a first and I haven't tried it yet but I'll let you know. I made them for a co-workers 5th company anniversary which is today - and she wanted to try my pies - plus I can also partake!

Good luck with your dessert - make sure you pass the recipe along if it turns out good.

Thanks Kathy!!  I will definately keep those recipies on hand for a future occassion!!  Today I made a mixed berry pie by making my own crust (which I think will be a little dry - I still haven't perfected that art yet, but keep trying!) and then mixing strawberries, blueberries, raspberries, black cherries with flour and splenda (just used the recipie in a book and sub splenda for sugar)  It's in the oven now....so we shall see!

Hi Pam,
I have had great success with blueberry pie by just taking the recipe in my cookbook, I think it is the Better Homes and Gardens cookbook, or it could be Betty Crocker, and just switching the sugar and using Splenda instead.  My family raves about my blueberry pies when I make them.

I have also made low sugar chocolate cream pies using Dream Whip, SF chocolate pudding and the graham cracker crusts from the store.  There is sugar in the crust, but not much.  If I were ambitious, I could make my own crust if I wanted to, using Splenda.

have fun.

Hugs,
Trish

Trish,

That's basically what I did - glad to hear it worked for you!!  I took a recipie for a mixed berry pie and I used splenda instead of the sugar along with strawberries, blueberries, raspberries, and black cherries along with the flour.

I did make my own crust from my mom's recipie - although it was a bit dry - so I don't think I will be happy with that.  Mom does it great - but it's an art - and not something I have perfected yet. Oh well - with practice I'm sure I'll get it!

Good Morning everybody - well the foamies finally stopped by yesterday - I took it real easy on the old pouch tho for most of the day - didn't want to pu**** So was feeling much better. Mom was also up for a little bit - I changed her bedclothes so she had a nice fresh bed to crawl back into. Took the dog to Fuzzy Butts today so she could get some more rest.

Celebrating a co-workers 5th company anniversary today - pizza lunch and I supplied dessert - Mary (guest of honor) is our resident baker but she asked me if I would make dessert for today - plus now I can partake in it as well. thinking I'll pass on the pizza, tho, especiallly after the weekend I had - I have plenty of food here to make myself a better lunch than that.

Other than that nothing new to report - hope everyone has a great day!

Kathy

Good Morning all. Hope everyone had a great weekend. My computer at home took a poop so I was without internet all weekend. It should be fixed by the end of the week. I hope! LOL

Today has me at work all by myself. So rooming patients, answering phones, check in and check out will all be done by me today! Whew......thank goodness it's not a packed schedule but enough to keep me moving most of the day! I just hope me and the doc don't end up butting heads today. That happens sometimes! LOL.

This evening will be heading to the Local VFW, cause it's taco night. And I will order my taco salad with no tortilla chips and no lettuce. LOL> They always laugh at me. But for a $1.50 and I get tonights dinner and tomorrow lunch out of it........can't beat it!

Then of course is The Monday Night Football game. I am a DIE HARD Eagles fan so I will be glued to the TV tonight, cheering my team on!

Hope everyone has a great day!

When life hands you lemons, ask for tequila & salt and give me a call!
