Pam - I did some experimenting this weekend and came up with this.... didn't try yours I am sure they are delish though!

This is the one my mom has always used but modified a bit for us, I used the fage yogurt for extra protein (and I used the whole 7oz instead of the 6oz the recipe calls for) I also used 1teaspoon of almosd extract and 1/4 cup of pecans.

Ingredients

2/3c milk
1 egg
1t vanilla
4T margarine(melted)
6oz yogurt
zest of a lemon
1C Splenda
2C flour
2t baking powder
1/2t baking soda
1 cup blueberries

Directions

makes 18 muffins.
Bake 350 degrees about 20 minutes
greased muffin tin.
Mix all ingredients just until combined, do not over mix muffins will get tough

Number of Servings: 18

Marsha - I am sure that you could substitute some of the flour with protein powder. I wouldn't go more then 1/2 cup though, it will change the consistency.

Oh and I have also done this recipe with frozen black cherries and almonds - yummy!

They sound awesome Liz - and I will be trying them out as well so does the variation with cherries and almonds!

Thanks!

Pam
