Brown Butter Gnocchi and Spinach
Tried a new recipe tonight, mainly because it takes less than 10 minutes to fix. Besides I have to feed my girl really good food, although I took it really easy on the garlic and onion because she's breast feeding.
BROWN BUTTER GNOCCHI AND SPINACH
1 pkg Gnocchi (Usually found near the pasta)
3 Tb butter
1/4 c. pine nuts
1/2 onion, thinly sliced
1 clove garlic, minced
10 oz. pkg baby spinach leaves
Parmesan cheese
Prepare gnocchi according to package directions (Boil about 2 minutes until they float.) Drain into colander and hold.
While gnocchi are cooking,in large skillet, melt butter over med heat, add pine nuts, and coo****il pine nuts are toasty brown, stirring often. Add onion and garlic and cook another minute or two, stirring often. Add all the spinach leaves and stir to help them wilt down. Season with salt and pepper.
Add cooked gnocchi and stir to mix well. Serve with grated Parmesan cheese.
