Jeannie, I'm going to try your black bean patties. They sound so good.
Tonight I'm boiling shrimp, so I'll have some in my frig all week. I'm also cooked roasted Brussels sprouts and a small baked potato.
I snacked on some plain salted popcorn this afternoon. YUM. NO butter, but I didn't miss it at all. Dr. Garth says that plain popcorn is a natural food and we shouldn't be afraid of it. Of course, if you drown it in butter, that kind of defeats the purpose. LOL!
Now to see if I can eat a baked potato without drowning IT in butter!

When I make mine, I use one can of black beans, about an eighth of cup of corn, and some chick peas. I rinse all of that off in a colander with cool water and let dry or pat them with paper towels. I sautéed the onions and the mushrooms: about four mushrooms sliced thing and about a half of a small onion diced...sauteed until tender and I use olive oil.
I smash the black beans, corn, and chick peas all together until mush...you can use a food processor but I use my potato masher....not the electric one. After they are mashed really good, I add the mushrooms and onions, a beaten egg, some flour, and the cumin, taco seasoning, salt, and pepper. Now depending upon how you are going to use them and how thick you like your patties will determine how you form the patties. I put a cookie sheet in the oven with olive oil so the pan will be hot, hot, hot...and then I put the patties...about four big fat ones. I cook them for about 20 minutes on one side and flip over (gently) and cook for another 15 minutes at about 370...you can let them get as dry and firm as you like.
I make mine into aloha burgers by putting pineapple slice on the flat bread, some avocado, a thin tomato, and lettuce....I use teriyaki sauce sometimes in the mix. They are delicious.

We'll we didn't have as much snow that they predicted so I was happy. My friend came over for dinner. I vacuum and swept and mop my kitchen floor. Otherwise not much is happening to me.

Sorry i have been MIA. Been working on volunteer work with a professional org. I am president this year.
This week was crazy. Thursday Claire was having severe indigestion that then started raidiating down her arm. I finally insisted on a trip to the ER. Good thing. After two sets of labs, despite her symptoms going away and no changes in her heart rhythm, she was having a heart attack. They admitted her at 1:30 am.
I went home because i had an appointment with my PCP at 9 am and had to get gas in the van and go thru rush hour traffic. So up at 6:30. I have a lesion of some kind in the roof of my mouth so i am seeing an ENT monday.
Then back across town to the hospital just in time for Claire go for a cardiac Echo. Then after much discussion and a second opinion, she had a carrdiac cath with a stent placement. The good news was , the three blockages she haf from two years ago was no worse. There was a new small but 95% blockage that they put in the stent. She came home yesterday. We were both dog tired, she was in bed by 7 and me by 8:30. Tired but grateful that she is in muchbetter shape tban i had hoped.
Well, i will do my best to keep in touch. I am struggling to lose that last 40.
