RECIPE THREAD
Salsa Chicken (my favorite recipe)
Boneless, skinless chicken breasts or thighs (I like thighs)
Taco seasoning (I use low sodium and only use half the package, but seasoning according to your taste)
1 cup salsa
1 can cream of chicken soup (I use the low-fat version)
1/2 cup sour cream or yogurt
Put chicken in crockpot or slow cooker (chicken can be frozen). Sprinkle taco seasoning over it. Mix salsa and cream of chicken soup. Pour over chicken. Cook on low for six to eight hours until chicken is tender. Then mix in 1/2 cup of sour cream or yogurt (I use light sour cream). Serve over rice (I use brown rice). Yummy!
