Good morning everyone....

Not much happening with me today. I just came back from grocery shopping. There we quite a few of us this trip. I love the convenience of it. 

I have a couple phone calls to make after lunch. I still haven't read yesterday's paper and the new one is here for today. I better catch up on that!!

Still fighting this damn depression. I am just going one day at a time. Lots of past issues that got triggered. I will get through it.

Praying all is well with Vickie and Butch. I hope Butch feels even a bit better today then yesterday. Baby steps....that is how that goes. Love you Vickie and Butch!!!!

Hi Connie and my OFF family:

Sorry you are feeling down; do you have a therapist to talk to? I know my session last week helped so much. Or you can talk to me ... I am a good listener and I don't judge. Will be home tonight. Call or text if you need to talk.

I got up way too early for me ... at 7 a.m. I was coughing a lot and had a headache. Headache still coming and going, but the coughing has stopped. So since I was up, I shredded two of the zucchini I bought last week and baked some zucchini bread ... my special recipe (low-carb, low-fat). Just got it out of the oven. Smells so good!

I did very little yesterday. I stripped the bed and did laundry, but that was all. Took two naps. Watched baseball and read. It was good to have a "me" day. Today, I have to drive Richard to his doctor appointment, then we'll go to lunch and Sam's. I have some things to get.

Hello Eileen......

I am so sorry you have the cough, headache, thing going on. Mine was better for a couple days and is now slowly creeping back. I am tackling it with meds and plenty of rest. 

Thanks for the offer to call you. I would trust you completely with anything I tell you. That isn't an issue at all. I may surprise you one day when we both feel better.

I know you always make a low carb, low fat, zucchini bread. I always envy you having that!!! It sounds so delicious!! I can only imagine how yummy it must smell in your apartment!!

I am so happy that you really took the day yesterday for yourself. You need to do that a little more often.

I hope Richard is feeling better every day. I am so glad you stuck with him and got him the help he needed. You are a true friend!! Have fun shopping today. I hope he goes with you like he said he would!!

Here it is:

 

GARDEN ZUCCHINI BREAD

 

1 c. all-purpose flour

 

1/2 c. whole wheat flour

 

1/2 c. whey protein powder (I use AnyWhey)

 

3/4 c. Splenda

 

2 tsp. baking powder

 

1/2 tsp. baking soda

 

pinch of salt

 

1/2 c. unsweetened applesauce (I usually add in a little extra for extra moisture)

 

1/4 c. skim milk

 

1 beaten egg

 

1 1/2 c. coarsely grated raw zucchini

 

1/4 c. finely chopped walnuts

 

grated peel of one lemon

 

1/2 can crushed pineapple with juice

 

cinnamon

 

nutmeg

 

vanilla (I don't have measurements for these because these are things I added in)

 

 

 

In a large mixing bowl, combine the first seven ingredients. In a small bowl, combine the wet ingredients and then add these to the dry. Stir just enough to moisten everything, then gently fold in the zucchini, walnuts and lemon peel. Bake in a sprayed 9" x 5" loaf pan at 350 degrees for about 55 to 60 minutes. Cool in the pan for 5 to 10 minutes, then completely on a wire rack.

 

 

 

Recipe note: This recipe makes a 9" x 5" loaf yielding 18 (1/2" inch) slices at 62.4 cals., 4 g of protein, 1.5 g of fat and 10.3 g of net carbs each. Two slices of this bread spread with 2 tbsp. of fat-free cream cheese makes a wonderful breakfast with only 164.8 calories but with 13 grams of protein.

Afternoon OFF family...just checking in from the FUNNY FARM....OMG they are driving me crazy at times!!! Not sure if there is something in the drinking water or maybe there should be!!!!!!!! SIGHS......

Went to chiro today can I say AHHHHHHHHHHHHHHH? Oh yeah!!!!!!!!!!!!! Feels soooooo good right now!!!!! Got back went in my office to shut things down and there is a tenant in laundry room said the agitator came off blew the lid up and out it came!!!!!!! WTH?????????????????? Said he jammed it back down but its still not right...OMG leave it ALONE!!!!!!!!!!!! I will call repair to fix it!!!!!!!!!!!!!!! CALGON TAKE ME AWAY...FAR FAR AWAY!!!!!!!!!!!!!!

I see my sister posted something on FB that her FAMILY doesn't care about her and that she has to start all over again for a kidney transplant....HUH?????? She NEVER set up the info to be sent to me for testing like she said she was going to!!! I have no clue what the hell she is talking about...but did ask for prayers...so Prayers for her if you would. Thankyou.

Hello Judy.....now you are on to something.....add something to their water.....LOL! Why did that guy mess with that machine...is he crazy....I bet Rick is really happy about that!! Oh the joys of living on the Funny Farm!!!

Sorry about your sister feeling that way...hope she gets that straightened out soon. That was a long  time ago that you were supposed to fill out paperwork for her. I will add her to my prayer list.

Glad the Chiropractor made you feel better!!! 

I hope you can hide away the rest of the evening. That is exactly what I am going to do!!  Too tired to care about anything else!!

Hello Everyone, am getting on late here.

Have lost one pound since yesterday.  Was wide awake for hours last night with insomnia, and at 3 am was hungry and craving carbs. I made a mug of tea and ate three crackers, then went back to reading in bed, finally fell asleep at 5.30 am. Had broken sleep and woke up every 2 hours or so, to turn around ....or I get too stiff, and made it to 10 am.

Did errands today, and when I came home decided to read instructions for my new veggie spiralizer. I made a raw Zoodle salad according Skinny Taste recipe, but used a store bought jar of pesto instead of making from scratch. I spiralized one zuchini, added 2 cherry tomatos, 6 thawed large cooked shrimp, grated parmesan and fresh chopped chives , 1 tbsp pesto, pepper and salt ( not much salt ) and it was delish.....got my meal in a bowl.  For lunch rolled a few slices prosciutto around mild cream goat cheese and a few stems of chives, then sliced the " log"into rounds, and tossed into some mixed salad greens with some lemon flavoured olive oil and balsamic vinegar. For breakfast had protein oatmeal with some 1% milk, and a sliced peach, plus 2 coffees....No snacks needed all day as I felt full, and of course drank the usual water. Will have tea and another fresh peach if I need a snack later, right now the zoodle salad and shrimp have left me feeling a bit full....

Hope everyone is ok despite whatever bad going on in your life. May tomorrow be a better day.

Hello Jennifer.....good for you losing weight again....I wish I was!! The meals you made sound wonderful. Thanks for the good ideas!!

My sleep was just like yours last night. Then I had to get up at 7:00 to shower and meet up with everyone to grocery shop by 8:30. I have been dragging all day!! I am going to bed in just a little while.
