Wonder if you could maybe use zucchini or spaghetti squash instead. It's a very high-protein recipe; just a simpler version of lasagna. Ricotta cheese and spaghetti sauce and mozzarella. If you just layered over zucchini, you'd get a similar type of recipe. Just a thought. Let me know if you want it.

I thought about spaghetti squash as that is what I use for spaghetti. I would love the recipe if you don't mind sharing it. Thanks so much! Hugs and love.... connie d

Better Baked Ziti

1 pound ziti

1 15-oz. container ricotta cheese

3 cups shredded mozzarella cheese, divided

1 tsp garlic powder

1 tbsp. chopped parsley

1 28 oz. jar spaghetti sauce (I use two, but with squash or zucchini, you may only need one)

1/2 cup grated Parmesan cheese

Preheat oven to 350 degrees. Coat a 9x13 baking dish or 3-quart casserole with cooking spray.

Cook ziti (but you will skip this step).

Add ricotta, 1 1/2 cups mozzarella cheese, garlic and parsley to the ziti, mix well. Spread half the spaghetti sauce overthe bottom of the prepared baking dish. Spoon ziti mixture into baking dish; cover with remaining spaghetti sauce, then sprinkle with Parmesan cheese.

Baked 25 minutes,then top with remaining mozzarella cheese and bake 10 additional minutes or until heated through.
