Happy Wednesday afternoon
Hello everyone:
No one started a Wednesday thread ... well, it's not quite Wednesday afternoon, but nearly. My back is feeling better a little bit every day. I think the combination of treatments have made a big difference. I will be ready to work again on Thursday (yes, I have to work the holiday, but it's extra money, so I don't care ... what else would I be doing? Just sitting at home).
I have salsa chicken in the crockpot for dinner today and I have to make one trip to the grocery store for brown rice and sour cream (don't think I have enough ... I think I have less than half a cup but I may be wrong). Plus, I want to get some blueberries.
Well, I thought I had posted but I guess not. This was still open. Have a good day.

Posted on Vickie's thread first, sorry. Can you send your salsa chicken recipe? I love salsa and it sounds good. Enjoy the blueberries. All the stores here have NJ blueberries on sale, bumper crop due to wet spring. I'm a blueberry snob who likes only Maine wild blueberries.

Salsa Chicken
Boneless, skinless chicken breasts (or thighs)
Taco seasoning (I use 1/2 package of low sodium)
1 cup of salsa
1 can of cream of chicken soup (I use the healthy request kind)
1/2 sour cream (I use light or fat free; you can use yogurt)
In crockpot, put chicken (can be frozen); sprinkle taco seasoning over top. Mix salsa and cream of chicken soup; pour over chicken. Cook on low for 6-8 hours.
When chicken is tender, turn off heat and mix in 1/2 cup of sour cream. Serve over rice (I use brown rice).

Thanks for the chicken recipe. I printed it off. I have problems tolerating chicken these days but am thinking that the chicken thighs might work for me. I'm going to try it. It sounds delicious.
