Fabulous Grilled Shrimp!
These are SO good! This is the best marinade I have ever tried for shrimp. You all have to try these!
MARINADE:
3 cloves garlic, chopped (or 1 1/2 tsp minced garlic from a jar)
1/3 cup olive oil
1/4 cup tomato sauce
2 tbs. red wine vinegar
1/2 tsp salt
1/4 tsp red cayenne pepper
1/4 tsp creole seasoning (like Tony's)
2 lbs large shrimp, peeled and deveined (I like to leave the tails on)
1 box cherry tomatoes (opt)
About an hour before cooking, mix together the marinade in a large glass bowl. Add cleaned shrimp, and stir gently until well coated. Cover bowl and place in frig. Stir once or twice while marinating. Marinate shrimp for at least 30 minutes, but not longer than 1 hour.
Place bamboo skewers in water to soak while shrimp are marinating.
Heat outdoor grill to 400-450 degrees. Thread 3-4 shrimp on each bamboo skewer, alternating with little cherry tomatoes if desired (it's pretty). Brush grill with oil (or use Pam for Grilling) before placing shrimp on hot grill. Cook approx. 3 minutes on each side, brushing often with remaining marinade. Do NOT overcook. Enjoy!!!
