Best Kale recipe I've tried so far!

As you know, I'm trying to eat more fruits and vegetables, especially dark greens. Dr. Garth says you cannot eat enough greens, they are so healthy and nutritious. Kale is a "super food" and I've been experimenting with recipes for it. I made this last night and it was by far the best kale recipe I've tried! It's even good for lunch the next day.
Braised Kale
2 slices bacon
1 med onion, sliced very thin
1 pound of kale, washed and chopped
1/3 c. apple cider
1 Tbs apple cider vinegar
1 tsp salt
1/2 tsp pepper
1 large Granny Smith apple, diced
Dice raw bacon and cook over med heat in large Dutch oven until crispy. Remove bacon bits, drain on paper towel, and reserve bacon fat in bottom of pan. Add the sliced onion to the bacon fat and saute for a few minutes until onion begins to soften. Add the chopped kale. (It will seem like too much, but it will quickly wilt down.) Stir and cook the kale and onion for another few minutes until the kale begins to soften and wilt down. Add the liquids, salt and pepper, and cover, cooking for 10 minutes. Stir often. Then add the chopped apple, remove cover and cook for about 5 more minutes, until the apple softens and most of the liquid cooks away. Top with crumbled bacon bits and serve immediately.
Vickie....this recipe does sound good. How is it for leftovers? I never make Kale because I think it would be gross heated up. I can only eat so much.
Also did you send me a email titled "update" ? I haven't opened it because I didn't know if it was a virus. Most are that don't have a name/title. Not opening it until I know for sure.

All I can tell you is that I just ate the entire bowl of leftovers from last night COLD right out of the frig. It was delicious. The piquancy of the granny smith apples with just a touch of sweetness balances the strong flavor of the kale perfectly. Plus the salty meaty bacon bits. It's the bomb! I can see myself making and eating this every week from now on. I love it.
And no, I didn't send you (or anyone) an email called "update". I did send you an email today that had no tag line. I sent it at 4:08 p.m. my time. I didn't even realize it didn't have a tag line or I would have added one that said "Maxine". It was just some cute senior cartoons. Nothing important.
