Vegetable Kale Soup!

I just can't help it!  I have to post this fabulous recipe!!!  Wow, it is so good, even if you're not trying to do vegetarian.  I did substitute some chicken broth for part of the vegetable broth (because I already had it open in the frig), so don't shoot me down on that point!  LOL!  Also the original recipe called for 2 tbs of Italian seasoning, but I don't really care for that, so I used seasoned salt and thyme instead.  The recipe also called for canneloni (sp?) beans, and I don't know what those are exactly, except I know they are a white bean.  I used white navy beans instead. 

THIS SOUP IS GREAT!  Just look at the NUT values!

Vegetarian Kale Soup

 

 

 Ingredients

·         2 tablespoons olive oil

·         1/2 onion, chopped

·         1 tablespoons chopped garlic 

·         ½ to 1 bunch kale, washed, with stems removed and leaves chopped

·         2 cups water

·         2 cups vegetable broth

·         1 ½ cups chicken broth

·         1 (15 ounce) can diced tomatoes

·         2-3 white potatoes, peeled and cubed

·         1 medium carrot, diced

·         1 (15 ounce) cans white navy beans (drained)

·         ½ cup corn niblets

·         1 teaspoon Seasoned salt

·         1 teaspoon dried thyme

·         salt and pepper to taste

 

Directions

1.   Heat the olive oil in a large soup pot; cook the onion until soft. Add the garlic and cook 1 minute more.  Stir in the kale, season with salt and pepper, and coo****il wilted, about 2 minutes. Stir in the water, vegetable broth, chicken broth, tomatoes, potatoes, beans, carrot, corn and seasonings.

2.   Simmer soup on medium heat for 25 minutes, or until potatoes are cooked through. Season with additional salt and pepper to taste.
