Hello OFF family!  Today, Wednesday, I am going to be busy cooking. Danny, our older son, is coming to dinner so I’m making his favourite POT ROAST. I went shopping last evening and bought the ingredients for a special broccoli-quinoa salad, garlic green beans and sugar-free jello with real whipped cream since he is on a high protein, low carb eating plan. 

Quinoa is a GRAIN actually but it forms a complete PROTEIN! It’s smaller than barley but it’s tasty and good for you! You can eat it hot like cereal or as a side dish like rice, in soups or cold in salads . 

According to wikipedia:   Quinoa was of great nutritional importance in pre-Columbian Andean civilizations, secondary only to the potato, and was followed in importance by maize. In contemporary times, this crop has become highly appreciated for its nutritional value, as its protein content is very high (18%). Nutritional evaluations of quinoa indicate that it is a source of complete protein.  

 

Furthermore, it is a good source of dietary fiber and phosphorus and is high in magnesium and iron. Quinoa also provides a significant source of calcium, and thus is useful for vegans and those who are lactose intolerant.  Quinoa is gluten-free and considered easy to digest. Because of all these characteristics, quinoa is being considered a possible crop in NASA's Controlled Ecological Life Support System for long-duration human occupied spaceflights.

 

I had designed a special business card for Dan since he is attending so many AVIATION TRADE SHOWS and they came back from the printers yesterday, just in time, since he leaves for a very special high-level Avionics course in Oklahoma this weekend. I am really happy with the cards and I hope that he will be as well.  On the front of the card which is silver, is a schematic drawing of a circuit board (in white lines) since Dan designs these, and beside it, above his name and degree, is a line drawing of a Piper Arrow aircraft that he flies. On the back, it states his background and skills.

I have also designed a flyer for Kathy’s business, SUGAR MAMAS- European baking - wedding cakes, cup cakes, cake pops and other sweets. That is in the process right now.

 

Well, it seems that I have to go and speak to Oreo again.  He insist on invading LilyRose’s private boudoir!  Have a wonderful day..savour every moment and remember to be grateful for all that we have!

Thanks for posting that info on quinoa.  I knew it was good for me, but had no idea just how good it is.

You sound like a terrific Mom, designing the business cards for the kids.  That sounds like something I would do.  

Yesterday, my interview for the volunteer position went well.  I had to fill out some paperwork while there.  Most important is the PA State Police Background Check.  I begin my training on Friday.  I saw my psychiatrist as well, and he is putting me back on Cymbalta.  I switched to Celexa because my kidney specialist suggested I try going off it, because she suspected the Cymbalta was causing my sodium levels to go down.  Well, after a month of being off it, my sodium level is the same, and  I'm not crazy about the Celexa.  I believe I was doing so much better with my depression on the Cymbalta, so we decided that I will go back on it.  

Today is a chillax day for me.  My apartment always needs tidying.  I hope switching back to Cymbalta has me more motivated to do something about it.

Good mornin' ya'll.
I have tried Quinoa. I really like it. My DH doesn't though.
Today, the weather is supposed to be cooler. We had a huge thunderstorm last night! I hope they are right. I have a few errands to run and I want to be cooler doing it!
After the errands......nothing! I need to decide on a new crochet project. I am thinking something adult with my chunky yarns. Maybe oatmeal and brown colors for my Sis. Her hip surgery is cancelled. Her doctors decided it was best to fix her heart valve problem before fixing her hip. DUH! They should have fixed the heart six months ago when they knew about it but nobody bothered to tell her!
Gotta run. I think this is gonna be one of those days when my DH drives me crazy. Just sayin'!

Nancy.....I was always going to try Quinoa but never have. I know rice and pasta doesn't sit well with me at all. I will look into this....thanks!! Oreo...LOL....private boudoir!!!!

I have two doctor appointments this afternoon. I got a new DROID phone yesterday. WOW....will I ever figure this one out!! Love the touch screen but there is sooooo much to learn!! I will be practicing a lot!

Hi all. Hump day, woohoo. Today is a normal work day for me. Nothing much else going on.

Question: I get this weird pain under my left rib cage if I sit in my work chair for over 2 hours at time. If I stand or walk it is better. Anyone have anything like that occur???? It hurts.

Mary...I have heard others complain about this over the years but can't remember what it was. Hope someone else has an idea for you.

Hi Mary,
   I had the same complaint. My doctor explained it to me at the time, but it's been too long for me to remember. I just know that it is not unusual and I think had something to do with a sutured area that is larger than the other areas.  He said to stand up once an hour and stretch even if just for 20 seconds.   Mag

Hi Nancy and my OFF family:

I have thought about trying quinoa, but haven't yet. Probably too much cooking for me to do. My body is in so much pain right now I don't think I could stand more than a minute and cook. Now my neck hurts, too. Can hardly turn it to the side ... that started last night. Fortunately, I'm going to the chiro today.

Last night started with a fire drill. I had barely sat down at my desk when the alarm went off. My knee was bothering me anyway; it was collapsing on me. So then I had go down two flights of stairs and across the parking lot and stand in 90 degree heat. I was miserable. Got back up to my desk and had to take a pain pill. After that, the rest of the night went OK. I'm happy to have two days off.

Well, not much else happening. Still hot here ... 91 degrees is better than 105, I guess. We need rain, though. After the chiro, I won't do much.
