Corn Soup
1 cup sliced leeks, light green and white parts only
2Tbs. unsalted butter
3 cups freshly shucked corn
2 1/2 cups low sodium chicken broth
1/4 lb. thick bacon, diced
1 teas. finely diced jalapeno, seeds removed
White pepper to taste
1/3 C heavy cream
Saute leeks in butter, covered, over med-low heat, stirring occasionally, for about 10 min. or until tender and carmelized
Add corn and broth and simmer, uncovered, 5 min, or until corn is tender
Meanwhile saute bacon until crispy, but not overcooked, drain
In a blender puree soup until smooth (just a little at the time, it's hot)
Return pureed soup back to the pan, heat through
Add white pepper and salt to taste. Stir in heavy cream
Divide soup between 2 bowls and garnish with bacon and jalapeno.
I don't like jalapeno, and I couldn't see that the bacon added anything. I think maybe a little balsamic vinegar drizzled in middle of the bowl of soup. That tastes good with my leek soup.
