Here is the delicious treat I've been making for Benny.  (Only they're so good I can't stay out of them!)  I really don't see why you couldn't make these using sugar free or low sugar ingredients.  And you can make so many varieties.  Have fun!

Jellies

 

1 env Knox Unflavored Gelatin

¼ c. cold water

¼ c. sugar

2 Tbs cornstarch

1 c. pomegranate juice*

2-3 oz. pkgs Jell-O Raspberry flavor*

 

Sprinkle Knox gelatin over cold water in small bowl and let stand 1 minute.

 

In medium saucepan, mix together sugar and cornstarch.  Gradually whisk in juice and unflavored gelatin.  Bring to a boil over medium heat; cook 5 minutes, stirring constantly.

 

Remove from heat.  Stir in both packages of dry Jell-O powder; stir 2 minutes until completely dissolved.

 

Pour mixture in a 9" x 5" loaf pan that has been sprayed with Pam.  Refrigerate 1 hour or until firm.

 

Unmold jelly onto wax paper that has been sprinkled with sugar.  Using a sharp knife that has been dipped in ho****er, cut into 24 pieces.  Store in covered container in frig.  Serve in mini paper muffin cups, if desired.

 

*You can use any fun flavor combinations that you wish.  Some ideas are—

 

Pink Lemonade (pink lemonade and lemon Jell-O)

Strawberry Lemonade (lemonade and strawberry Jell-O)

Cranberry Orange (cranberry juice and orange Jell-O)

Berry Cherry (blueberry/pomegranate juice and cherry Jell-O)

Pineapple Lime (pineapple juice and lime Jell-O)

If you look on the Knox package you will find the recipe for Knox Blox.  I make them all the time with the sugar free jello mixes.  There's just a fun as your jellies especially if you cut them in shapes with cookie cutters.  I also just use water instead of fruit juice.  No cooking other than boiling the water.

I make my grandbabies jello jigglers and my grandkids, especially the toddlers, love them.  The recipe is on the box
