filling guiltless snacks
Okay, as you all know, DH is on a diabetic diet, so I've really been working on snacks that he can eat that won't mess with his sugar and that will provide him and me with protein. So, below are a few of those really good and quick snack foods:
1) Pepparoni chips--these are so dang good, I have to struggle to put them down. For newcomers, these are from one of the older members: Spray a cookie sheet with Pam or use parchment paper, spread pepparoni in the cookie sheet. Cook in the overn sat on broil. Leave for a few minutes and flip over, cook a few more minutes, then drain on paper towel. Too good.
2) Quick fried (olive oil) chick peas. I use leftover chick peas…rinse in cool water, pat dry with paper towel. In a large skillet, cover the bottom with olive or peanut oil and let get hot…put the chick peas in the hot grease, cooking on high….you mus****ch this dish…flip over and let the other size crisp up. Remove from heat, season…I use salt, pepper, Italian seasoning, and chili pepper. Serve warm. They are delicious.
3) Sweet Potato Chips: These are too easy. Peel and cut in thin slices one or two sweet taters. Rinse and pat dry. On a cookie sheet, coat with oil, then put sliced taters, cook in overn until cooked on one side, then flip over and cook the other side. Remove from oven when the taters are crisp, season.
4) Apple dumpling: Cut the top of apple, remove core by cutting around the core and scooping out with a sppon. Put a dab of butter in the bottom of the apple, follow with cinnamon, then splenda, then ground ginger and a dab of cloves, then another dab of butter and cinammon. Place the top of the apple back on and wrap the apple in aluminium. bake until done.
Jeannie, These all sound great. I'm going to try the sweet potato chips, the chick peas. . .hell, I'm going to try them all.
I have started making my own jerky. I use a convection oven but a dehydrator or regular oven can be used.
I start with a London Broil and have the butcher slice it in 1/4 inch slices. There are lots of recipes for marinades on line. Marinade at least over night and then follow directions. With a shap knife and a cold or almost thawed frozen one I am also able to make 1/4 inch slices.
**BE sure to spray the racks with cooking spray or you will have a mess to clean up. Since I'm not crazy about cooking spray I use the wooden kabob skewe that are for grilling. I dampen them, but the temp used is so low I've never had any problem with the wooden skewers.
Remove meat strips and pat dry with paper towels before hanging from skewers.. Lay the skewers across the oven racks making sure you leave enough room for the air to circulate.
In my convection oven it takes less than 2 hours and from a large London Broil I get two quart Zip Loc Freezer bags of wonderful jerky. It's still salty but not as full of preservatives as that bought in the store. I store it in the freezer but do not need to keep it cold if eating within 6 hours.

Question for you - as I said - I am almost 5 years out (in July), but I have noticed in the past couple of months an increase in the desire for food - what do you think? Vitamin imbalance? Too many carbs?Have you had this?

I love pepperoni chips....I use the turkey pepperoni. They can be done in the microwave too. They only take a minute to do...YUM!!!
The apple dumplings sound great too. I will try them. I can't eat raw apples but I bet I could eat these.
