Good afternoon my OFF sistas!
Same song, second verse. I just finished up with a big noon meal for my boys again. Juan is back again today helping Butch trim up our 12 big oak trees that line our driveway. (Yep, just like 12 Oaks in GWTW. Our own little mini-plantation! LOL!)
We are on Day Two of our gluten-free diet. This morning I fixed cheesy grits and poached eggs. I think hubby missed having a piece of toast, but I served some crunchy apple slices with our breakfast and that helped. I didn't miss the toast at all.
So, I had quite an adventure at the grocery store this morning. My goodness, everything has wheat in it! I bought several kinds of specialty flours to experiment with. Marti--I looked up that recipe for the hamburger buns, but it has that tapioca starch and potato starch in it. Those are the two very things that Dr. Davis says to avoid as substitutes for wheat flour. It's a little confusing to me still, but I'm trying to get it all learned.
One more thing about Wheat Belly and then I'll hush. I do want to recommend this book to all of you. As I read it, I actually think of several of you when he describes symptoms of wheat sensitivity. So many of the complaints that we air here are addressed in this book--low energy, mental fog, joint pain, diarrhea and other tummy upsets, food cravings, food highs and lows, etc. Not to mention belly fat! I think wheat belly may be why I have lost 90 lbs, but still have a 36" waist. I'm interested to see where my weight and my waist are in 4 weeks.
Well, I have a date with my messy attic again this afternoon, so I'd better get to it. It sure is easier to clean things out when you have a strong young man to tote it all down the stairs for you!

Good to know Vic....or should I say Melanie...I am very glad to know about the starches that Dr. Davis says to avoid. I have not tried his recipes...but I do give DH his GF bread for toast in the morning....I get it at a local store nearby called "Silly Yak" get it celiac. He says it makes good toast. So there is hope for your DH.
