These muffins are so good!  I just have to share the recipe.  I'm printing the original recipe in BLACK, but I'm printing the changes I made in RED.  These muffins are low fat, low sugar, and high fiber.  Pretty high in protein with the changes, too.  So yummy, especially served warm with cream cheese!

All Bran Applesauce Muffins

1 1/2 c. bake mix *
1/4 c. packed Brown Sugar Splenda
1 c. All Bran cereal (either original or buds)
1 c. unsweetened applesauce
1 egg
1/4 c. milk, plus 1/2 c. milk **
1 tsp. cinnamon
1/2 c. chopped pecans ***
1/2 c. raisins

PREP:  Preheat oven to 375 degrees.  Spray 12 cup muffin tin with Pam.

DIRECTIONS:  In medium mixing bowl, beat egg with 1/4 c. milk.  Stir in All Bran, applesauce and raisins.  Let sit for a few minutes to soften cereal and plump raisins.

In large mixing bowl, combine bake mix, brown sugar splenda and cinnamon.  Stir in nuts.  Add applesauce mixture and remainder of milk to flour mixture and stir just until blended.

BAKE:  Divide batter evenly between 12 muffin tins and bake for 20 minutes.

* 1 c. whole wheat pancake mix, 1/2 c. all purpose flour, 1/2 c. protein powder (if desired), 2 tsp baking powder

** Increase additional milk to 3/4 c. if adding protein powder

*** To lower calories, decrease chopped nuts from 1/2 c. to 1/4 or 1/3 cup, or leave out nuts entirely, if desired.
