My mother-in-law's recipie for cranberry mold.  I make it every year.

2 cups fresh cranberries
1 tsp grated orange rind
1 cup sugar (I'm substituting Truvia)
1 .3 ounce package cherry gelatin (I get sugar free jello)
1 cup boiling water
1/2 cup cold water or orange juice (I use juice)
2 apples, peeled and diced
1 can crushed pineapple

1. combine cranberries, ground or finally chopped (I put everything in my cuisinart), pinapple, ornage rind and sugar.  Let stand 30 minutes.
2. Dissolve gelatin in boiling water, then add cold water or orange juice.  Refrigerate until slightly thickened.
3. Add cranberries and apples.  Pour into 2-quart ring mold.  Refrigerate at least several hours until set (I make 2 days before).
4.  Unmold (dip in ho****er for 15 seconds).  If unmold early, leave mold on until serve or it spreads on the plate.

Happy Thanksgiving.

Thanks for posting Jan. I'll make as soon as I know what size can of pineapple. Been looking for a recipe like this.

I'm at work so I can't check the can but just a regular can, maybe 15 ounces?  It really fills up the mold.

Enjoy!
