Well another day of cat wrangling and driving in rain. Hopefully I'll break free of the clouds the more southwest I drive today.
Did okay with the head hunger yesterday. Stopped at a Sheetz for gas and coffee. Bought a breakfast taco and it was so lousy that I put it in the trashcan. Ended up eating the greek yogurt I had in the car.
So time to go cat wrangle and hit the road. My thoughts go to all of you in the northeast who are getting Halloween snow! Trick or Treat!

It's in the low 40's here this morning. That, to me, is COLD! However, I know it's nothing compared to the freaky early winter snow storm some of you are enduring this weekend. The weather is so strange these days.
I tried all day yesterday to ignore it, but what I really wanted to do was BAKE! So I finally got in the kitchen and spent a very happy couple of hours coming up with a new low fat, low sugar, high fiber pumpkin muffin. I used all the tricks I could think of to make it more healthy. I substituted whole wheat flour and almond flour for part of the all purpose flour. I substituted unsweetened applesauce for most of the oil. I used Splenda Brown Sugar mix for baking. I used Greek yogurt for part of the milk. I LEFT OUT the pecans, which I love! I did all these tricks and I made 60 mini muffins.
Then I put the recipe in my recipe calculator and yikes! They still had 50 calories each! And I ate about 8 of them. This is no damn good. I'll have to freeze them this morning before temptation gets the better of me today.
I tried very hard to feed myself some good food yesterday. One of the hardest parts to living alone, I think, is the planning of meals. The temptation to just snack and not bother with cooking is so easy to give into. My veggie beef soup is all gone now, so I'll have to think of something else to cook today. Hmmmm . . .
Trish--I finished my first scarf last night, all except for working in the loose ends. Looking for a new pattern to start on tonight.
Cindi--wow, Victoria and Corpus are a long way from Anahauc! Why don't we just wait until you get all settled, and then we'll try to plan something. You're going to be exhausted after all your travels. Good for you with the head hunger!
Judy--I saw on FB that you got your heated mattress pad. I'm so glad you liked it! I turned mine on last night and the puppies just loved it. We all snuggled up and slept like babies.
Monica--have fun with all the big Halloween to-do's at the RV park! Did you get Yoda a costume? I always loved Halloween when my kids were little. It was our favorite holiday.

Vickie, I love zucchini quiche or slice or whatever you want to call it. I add all kinds of things to eat to up the protein. I like it hot or cold for breakfast, lunch or dinner. Eggs, meat, cheese, any kind of extra veggies. There are tons of recipes. I also can tolerate cold meatloaf or roast beef. Also extra taco meat with a bit of mayo (sounds gross but I need a bit of oil to get it down). Cottage cheese on 1/2 slice of multi grain toast or english muffin. When I make stew, chili, or beef barley soup I double the amount of meat.

Yes, I love nuts, but I left them out because of the calories. I knew I was already running high. These would be really good made with mashed bananas and chopped pecans. I also love cranberry orange muffins. Hell, what am I saying? I love all muffins! LOL!
I'd love to do a recipe exchange. Maybe we can swap recipes when we get together later next month (or possibly December). I think Cindi is going to try and join us, too. Won't this be fun?
BTW, I froze all the muffins but 6 this morning. I let myself have 2 this morning. I can have 2 tomorrow and 2 the next day--if they last that long!
I agree with you that planning meals for one is a challenge. I've been teaching myself to cook and freeze things in manageable portions. I tried a great recipe for a pork tenderloin with rosemary and balsamic vinegar. I cut it into 2 oz packages and freeze it. Do the same with chicken breast (freezing that is). Then I just pull a portion out of the freezer at lunch time and by dinner time it's ready to be zapped.

Well last night I had NO cable OR internet!!! GRRRRR!!! Sooo we went out looking for a heated mattress pad and found a good buy for $59.00!!! Came back home stripped the bed and put it on made the bed again and turned it on and ahhhhhhh!!! Called Time Warner and complained that this was the 3rd time this month we had no cable and would they do something nice for me on my bill? Oh yes. Credit of $8.08. Thankyou! Then I found out my internet wasn' working either. Grrrr. Called them again to see if it was also involved with the cable being out. Yes. Fine. Sooo already in a bad mood the elephants started up with their stomping around...now they have the DISH and so they had no reason to be upset...anyhow they were just being themselves. Rick had it with them and yelled loud "knock it off or I am calling the cops!!!" Boy they scrammbled and went to the bathroom and left the building for a couple hours...lmao!!!!!!!!! They came back about 1230am and she starts using the vaccum cleaner!!!!!! Her boyfriend starts screaming at her to knock it off and he unpluggs it!!! LMAO she is unreal!!! We were all cozy in bed I was watching Say yes to the Dress. Love watching that show...All those pretty dresses!!! And the New show from Beverly Hills!! OMG the prices on those dresses!!! WOW!!!! Rick hates those shows but oh well...lol Now the shows we really like is the hardcore pawn I think its on tuesday night about midnight. And the bait car and also the repo show.
Weather here is cold...BRRRR 36* calling for some snow maybe??? YUCK!!! Had to scrape the winshield yesterday when I went to work!!! Glad my scrapper was in the car yet!!!
Anyhow when I got up this morning I felt pretty good from sleeping on the heated mattress pad all night. Now to see how long this feel good feeling lasts today!!! :-)
Well not mnuch else to say so will get back to making afghans. Still no word on my time off fo trip home for Christmas...she was in a fould mood yesterday so I didn't ask her....:-(
