Ok, here is the recipe I used, it's got a great flavor so far. The changes I made are, I used the lemon juice & water instead of the acid. I also used 1/3 splenda instead of all sugar. I haven't canned them yet of course, but so far the are so good. Oh, I also added about 1/2 cup of triple sec. Thats just me, not in the recipe. Nan

Homemade Maraschino Cherries

3# cherries---8c. water ----1T. almond extract.---2T. food coloring----  1 1/2 c. water
Remove pits from cherries.
Combine 8 cups water and ascorbic acid.(1/2 water 1/2 lemon juice)
Add cherries to the solution.
Don't allow the fruit to remain more than 20 minutes.
Rinse fruit; drain well.
Combine 1 1/2 cup water and sugar. (3 c. sugar)
Bring to a boil.
Stir in food coloring and add the cherries.
Reduce heat; simmer for 5 minutes.
Cool completely, allowing cherries to soak 24 hours.
Next day, bring to a boil and then stir in almond extract.
Pack hot cherries into hot jars leaving 1/2 inch head space.
Shake jars to get firm pack.
Bring syrup to a boil and ladle hot syrup into jars.
Process in water bath for 15 minutes for 1/2 pint jars.

Well, that sounds simple enough.  Love the addition of the triple sec.  Yummy.

Here is my Pear Preserves recipe.  Now how on earth am I going to adapt it?

22 cups sliced, peeled pears
5 lbs. sugar
1/4 c. lemon juice

Combine all ingredients in large pot and bring to a boil over high heat, stirring often.  Once boiling, reduce heat to simmer and cook approx 1 hour, 30 minutes, or until the preserves are a light golden color and translucent.

Pack fruit into hot sterilized jars, seal and process 10 minutes in boiling water bath.  Yield: 12-13 cups of preserves

And this is my Fig Preserves recipe.  Again, I don't know how to do this without sugar!

For every 1 qt of washed, peeled figs, add 2 cups of sugar and 1 TB lemon juice.  Combine ingredients in large pot, bring to a boil, reduce heat and cook approx 1 hour to 1 hour, 30 minutes, stirring often.  Preserves are ready when fruit is golden and translucent.

Pack fruit into hot sterilized jars, seal and process 10 minutes in boiling water bath.  Yield: 2 cups of preserves for every quart of figs.

I'm open to suggestions!

 Good morning Eileen and everyone...

Eileen....glad your ceiling didn't completely fall down. What  a mess!!!  Hope they 
fix it right this time!! 

Nothing too exciting happening here right now. Grace and I are up and everyone else is still asleep....it is already 11:00AM. I am going up after them soon!!! They stay up late so Grace wakes me up when she gets up. 

Not sure what  our plans are for later...Jamie works at 4:00. Grace was supposed to go with her dad at 3:00. However, he is working on Jamie's car so he isn't taking her today. I guess I don't understand why he needs a whole day to do that but oh well. It is just an oil change and check a few things.

No day off for me this week as I had Grace last night.....think it is time for a meeting!! 

Guess I am just feeling frustrated today....sorry to be whining.

Not whining women, just frustrated. You need to have the meeting. You gave up alot to help your family and YOU need YOU time. Too generous and sometimes it becomes USUAL for you to be asked or ASSUMED to be around. Thats all I have to day about that.

Thank you Monica....I appreciate your understanding. Yes, I do feel like my time is not important. I am here so I can just do it!!!

I will be changing that soon!! I thought I was just overreacting.

I am just getting so worn down.

Connie, I so know what you are going through! It's not that we don't love them, but we raised ours & noe it is time to be Grandma. At least some of the time. I had that meeting once & things got so much better. Good luck!!

Julia...first of all thank you!!

When I was asked to move here I was told Grace would be with her dad every Tuesday, Friday, and Sunday nights. Travis was taking Wednesday's off and keeping Grace all day. He no longer takes Wednesday's off. His work is really busy on Wednesday's in the summertime. That I understand. Jamie has off on Saturday's so I was to have my time.  That sure isn't how it works out. I don't like that I am not even asked it is just assumed!! 

Yes...I do need those times off to recover and have ME time.

Time to have a meeting!!!
