OMG recipe! No, I promise I'm not nuts...lol
Alright gang, most of you know my son and his darling bride are Vegan. In an effort to support their lifestyle (she's lost 85 lbs, he's lost almost 30), I will sometimes try a recipe or two that she suggests. Well, the other day she said she had made these tasty chips for snacking on and I had to try them for myself. What were these wondrous things, I asked? Kale chips, she said. Hmmmmm, I thought doubtfully, kale chips? Is she MAD?????
I got on line today to find some recipes for these little gems and lo and behold there are lots and lots of people out there making chips out of kale instead of potatoes. Normal, everyday folks like you and me!
Curiosity got the better of me and I just took my first, and certainly not my last batch out of the oven. Gary might not make it home in time to try them, for they may be all gone. But then, if they're all gone, will he even know he's missing something????
Here's how to make them. I promise you, even if you just try this so you can tell your friends you did it, it will be worth it. Have I ever steered you wrong???
Kale Chips
Preheat oven to 350
1 head fresh kale, stripped off of heavy center stem, washed and dried thoroughly
1 tbs olive oil
1 tsp salt, or Mrs Dash, or Cavender's, or season salt. Your choice
When you strip off the kale from it's center stem, break it up into not-too- tiny pieces. The kale will shrink as it bakes. I'm guessing I had about 4 cups loosely packed kale
Put kale into a large bowl and drizzle oil over the leaves and mix, toss, smoosh, whatever to get the oil all over the leaves.
Bake at 350 for about 11 minutes, checking to see if they're crispy yet. If not, add another minute or so at a time, being careful not to burn the little bits
Remove from oven and sprinkle seasoning (salt, or whatever) all over.
TA-DA!!!! A tasty, late night, middle of the day, heck, anytime snack that's good for you and no one will steal at work.....lol

Cals: 185
Fat: 6
Carbs: 29
Fiber: 10
Protein: 10
Kale has over 300% daily values of Vitamin A, 200%+ C and all sorts of other goodness.

No, you're not dumb, I hadn't had it until about two weeks ago. Kale is a dark green, leafy vegetable that is usually found in the produce section with turnip and mustard greens. It's very firm, and absoutely jammed packed with vitamins A and C as well as iron and fiber.
Check out food.com and put in Kale for some great recipes. Or better yet, make some kale chips for those times when you need something crunchy/salty/yummy!

I will be trying these soon. . . sounds like you might have, courtesy of your Dear DIL, stumbled upon a good substitute for chips that pack on pounds with very little, if any nutrional value. . .
