Saturday and March Break - What's new with you?
Hi Vickie:
I get a lot of fabulous recipes from www.bariatriceating.com. She has wonderful soup recipes especially, but all her recipes are good.
I also want to share a recipe that I love with you:
Cottage cheese salad
2 cups low fat cottage cheese
Mix in 1 sm. pkg s/f jello -- I love orange or lime
When well mixed, add 1/2 of an 8 oz. carton of lite
cool whip and fold in. Let chill for several hours.
1/2 cup serving is 120 calories
Some times I add a small can (in it's own juice) of well drained crushed pineapple or a drained can of mandarin oranges.
I keep this in my refrigerator all the time.

Hi Pat! Thanks so much for sharing your salad recipe! Sounds delish, and I have all the stuff to make it this evening. I'm going to try it.
I'll also check out the web site. I've been looking at some recipes from a site called Pouch Party on FB. But I'm a southern gal. I don't always "get" some of the recipes they post there. What I need are lighter versions of the good ol' southern favorites I grew up with. I noticed that Paula Deen's son Bobby has been creating lighter versions of some of Paula's dishes. I might check that out.
Also, just recently found a magazine called Cooking Light. I think I'm going to take out a subscription.
Just FYI--my pickles turned out great! Got 16 pints cooling on my island right now. We love to eat them on black eyed peas or just about any kind of peas or beans. Also really good with fried catfish, but I guess I'm going to have to come up with an alternative to that dish! My husband and I love to fish and one of our family's favorite meals is fried catfish, fried potatoes and fried hush puppies.
Hmmmm . . . what am I gonna do about that? :)

Here's another site for recipes. It's called the world according to eggface. She has had an RNY and has put together a very comprehensive web site with a variety of recipes.
If you go to the site, you can search for any ingredient in her search engine and find recipes specifically for that ingredient. I search for black eyed peas and found several recipes.
