Meringue Drops - I apologize
I haven't had time to get online for about 3 days. Except a quick check from my iPad, and I can't post with that.
Someone asked for the Meringue Drop recipe I did last week. It is NOT sugar free. I suppose you could try splenda.
Meringue Drops
3 egg whites 1/2 teas vanilla extract 1/4 teas cream of tartar
food coloring (optional) 3/4 c. sugar (I used my vanilla sugar)
white pearl or course sugar (optional)
Bring egg whites to room temp. Add vanilla, cream of tartar and coloring. Beat until soft peaks form. Gradually add sugar, 1 Tbs at a time, beating on high until still peaks form. Using a #3 star tip, pipe 2" circles or other shapes 2" apart on parchment paper lined baking sheets. Sprinkle with pearl sugar if desired.
Bake at 300 degrees for 20 or 25 minutes, or until set and dry. Turn off oven and leave meringues in oven for an hour. Store in airtight container. These are very delicate!
Vanilla Sugar
I always keep a container of this on hand. Any time I use vanilla beans, I take the left over pod and put it in the container of sugar. If the pod has been used in something wet (like creme brulee), I let it dry before adding it to the sugar. It takes about a week to get a really nice vanilla flavor. As the level goes down, I add more sugar.
