Recipe - Zucchini Slice
Recipe as requested. I don't think it's too healthy. Hope I did the conversions okay.
Zucchini Slice
550g zucchini = 19.4 oz
1 medium onion, finely chopped
130g diced bacon - remove rind and all fat = 4.6 oz
1 cup of lightly packed cheddar cheese = 2.6 oz
112 g self-raising flour (not sure what you call it) = 4 oz
salt and pepper
4 large eggs
83ml or 1/3 cup peanut oil = 2.8 oz
Preheat oven to 180 degrees Celsius (160 if fan-forced)
Line an 18cm x 28cm (7 in x 11 in) baking dish or slice pan with baking paper
1. Fry bacon and onion for about six minutes, stirring occasionally until onion has softened, not browned. Set aside to cool.
2. Remove ends of zucchini and grate finely. Squeeze handfuls of grated zucchini over the sink to remove excess liquid which prevents slice from being too went. You can also add a grated carrot if you wish. I do.
3. Combine grated zucchini and carrot, cooled onion and bacon mixture, cheese, flour, salt and pepper in a large bow.
4. Use a fork to beat eggs and oil together then add mixture to other ingredients and stir. I use my hands to make sure it all mixes well.
5. Pour mixture into baking dish and spread evenly. Top with some grated cheese. I also like to put some slices of tomato on the top.
6. Bake for about 45 minutes or until slice is golden brown and firm to touch. Set aside for 5 to 10 minutes before slicing.
Store slice in the refrigerator. I have frozen it successfully but it isn't as nice.
Nutrition Breakdown - Approximate for whole slice. I am not sure what you would eat but I would guess approximately 12 pieces from each slice. Not sure if it's the healthiest slice to eat.

For inquiring American minds, the internet search said that 170 celsius is equal to 356 fahrenheit. Mine is in the oven as we speak. I used one of my 2 cup grated freezer packages of zucchini and about 3/4 cup of Jiffy mix in place of the self rising flour. I'll let you all know how it turns out.
A little tip that I've been using a lot. Someone posed usesfor paper coffee filters. They make great little measuring containers for using a food scale. I don't even try to figure out what one weighs! Much better than trying to use a paper towel or small paper plate! Used a coffee filter to weigh the Jiffy mix. It came out to about 3/4 of a cup in the amount of ounces. May have needed a bit more as I'm thinking it might not be thick enough compared to other quiche type recipes.

Turned out great even with my alterations. Didn't have peanut oil, used regular. Used 3/4 cup of Jiffy Mix instead of self rising flour. Probably an ounce or two shy on the frozen grated zucchini I had on hand. Still tastes great.
I added the grated carrots, makes for a nice color. I'm thinking green or red pepper would also be a colorful addition. Hey, this has lots of protein. It may not be super healthy but it's not refined carbs so I'll call it a keeper!
