Chorizo???

michael kept talking about it - bought some- finally cooked it last nite- didn't realize it was a "loose meat" sausage-so i cooked it in some water in the pan-he had made a pan of white rice and i sauteed yellow squash, onion and zucchini--so we layered it in a bowl with the rice on the bottom- heavy on the veggies---sprinkled some parmesan-yummo!

it was a teensy spicier than i was in the mood for but good....

how do YOU cook it? have you ever ?????

probly would be a whole lot easier for taco filling than seasoning mix?

Very traditional Mexican sausage that Gary just loves. I don't buy it because of the fat content, but when his mom has made it for him she always cooked it with diced onions and then scrambled eggs in it. Wrapped in a big ol' flour toritlla and you have a happy Mexican breakfast!

It was in a recipe I tried once for a gumbo....I found it quite greasy, which doesn't sit well in my pouch....never bought it again.  I don't eat rice either, but your dish sounds good and so does Susan's for anyone who can tolerate it.

LOVE LOVE LOVE chorizo...I fry it with some onions and use it in quiche.  If the Mexican chorizo is too spicy...I find chicken chorizo at Wegmans.  Its not as spicy but, I find its a little tougher to cook than the Mexican.  I also put it in chili.

Hi Margo, I make mine using scrambled eggs. I cook the sausage until it is almost done and add about 6 eggs. It depends how much chorizo you have. Be careful when chosing chorizo. It has salivary glands and other ugly things from a pig. You can make your own. The mexican stores have spice packets and you use ground pork. Mona

thx mona--i just had no clue what to do with it---wanted to taste it before ruining some other food so i kept it seperate in the pans!
