Morning everyone!

Well, yesterday was a BUST.  Late bkfst, no lunch to speak of, and then a out for dinner. The entire day was filled with salt, so I feel like a puffer fish. Today will be better, and since I'm off I can really pound down the water and hopefully be able to put my rings on tomorrow...lol.

The recipe today is for a meatless Hoppin John. It's a very traditional Southern dish that is usually made with ham. This recipe looks to make a very large amount, but the number of servings is only 4, which puts the nutritional info way out of whack, so don't be put off by those numbers. But....it looks like a very healthy, low fat, high fiber/protein side dish or maybe a cool lunch dish during this nasty heat.

Here's my Sunday Salt Fest:

ham, egg, bagel thin and some canteloupe
popcorn w/ butter at the movies
1/2 Ruben sandwich
cottage cheese/ canteloupe

Told ya. Not good.

Fish Reubens make me puff too.

Crazy day and low on water. Must run to see my Southern daughter and grands. I'll either have lunch with them or grab something later.

Hello!!!

Sunday for me was clear liquids....so I had lots of jello, Motts for Tots apple and white grape juice, and fat free veg broth. Oh and lets not forget that wonderful prep you have to drink for hours........

Todays food will be lite.....

B- nothing  (had to go for colonoscopy)

L- egg, dry toast and tea

S- maybe some yogurt...not sure about that....if not maybe more jello...I'd love some watermelon but don't think I have any in the house today.

D- probably oatmeal with some added protein

Looking forward to a more normal menu tomorrow.

Hope you are having a marvelous Monday.
