zucchini lasagna - Pat's Way
Assemble ingredients as usual for regular lasagna.
I use ground turkey with lots of onions, garlic, and green pepper and add a can of spaghetti sauce along with some added oregano.
Instead of using lasagna noodles, I thinly slice (rounds) a medium sized zucchini (not necessary to peel, but scrub well). When layering start with a little sauce in bottom of 9 X 13 sprayed glass dish, then a layer of zucchini slices in a long row slightly overlapping, then sauce, ricotta mixture, shredded mozzarella, repeat ending with sauce and shredded cheese.
Bake at 350 for 55-60 minutes. This must set for at least 10 minutes to firm up before serving.
