This looks like a great summer salad and I can't wait to try it. I'd bet you could even add some diced ham to it and make a nice little meal.  Hmmmmmm  Never can leave a recipe alone...lol

Fresh Green Bean Salad
Perfect for any backyard barbeque

Servings: 8

• 1 pound fresh green beans, trimmed
• 1/4 cup walnuts, chopped and toasted
• 3 tablespoons finely chopped Italian parsley leaves
• 1/4 cup chopped red sweet onion
• 2 teaspoons olive oil
• 2 teaspoons red wine vinegar
• 2 teaspoons honey
• 2 teaspoons Dijon mustard
• Salt and pepper to taste

Steam green beans for about 4 minutes, leaving crisp tender. Transfer to a serving bowl.

Toast the walnuts in a small skillet over medium heat until they become fragrant, about 2 minutes, and then transfer them to a small bowl to cool. Add the parsley and onion to the walnuts and stir to combine.

In another small bowl, whisk together the oil, vinegar, honey and mustard. Toss the dressing with the green beans, top with the walnut mixture and season with salt and pepper. Serve warm or at room temperature. I like best at room temperature which is great for backyard picnics.

Yesterday's menu.

applesauce, cottage cheese and a Lt English muffin
leftover salsbury steak, some mashed potatoes
hummus and baked pita
big salad. Yummmmm: baby spinach, chicken, strawberries, walnuts, red onion and feta. Man, was it good. One half ww roll on the side. I was stuffed
applesauce w/ lf granola

No plans for today, but I'd really like to get the bed taken down in my office. No company coming for the foreseeable future, no need to have it. That ought to get a good sweat on!

Since I"m not a food journaler.. and I need to be..

I'm just going to edit today so I physically see what I'm eating today.  I hate being at home.  It's too close to the refrigerator.

So this morning..

I put some butterstuff with canola in the skillet w/2 eggs and a handful of shredded cheese.

Now I'm heading for Starbucks.. and the usual.. yep.. small coffee w/half and half. 

It's 12:45... I don't think I've had anything else to eat... I've been working around the house.  I guess it's time to look in the fridge... or not.

3:15 p.m.... just got back from Starbucks.... Orange Mango Vivanno w/5 scoops of protein (30 g).  Free drink coupon.  290 calories.

11:28 p.m.  Finished the day with a child's plate of black eyed peas, baked squash and could only eat a portion of the meatloaf and had watermelon while watching the fireworks.  I'm done.

DIL called to see if I wanted to go to dinner with them and see fireworks tonight. I soooo wish they'd call earlier with invites so I'd have something to look forward to.

I've been to Lowe's.  Guess I'll go back and order a storm door with a screen for the front door.  Will give me a chance to open my door and have some air. I'll leave my solid door in place.

Instead of new carpet, guess I'll get mine cleaned and then just have the vinyl replaced in the kitchen, foyers, bathrooms.  Actually looking at laminate like hardwood. 

Being off is dangerous.

I can't imagine being at home all the time. Actually, I do fine during the day, it's the evenings that get to me. Maybe I should go to bed @ 6:00? That might solve the problem.

Actually, many nights I'm in bed by 6:30 if I get home early.  Just to keep out of the refrigerator.  Some life, huh?

Mmmm - any green bean recipe is good. Your salad sounds super too. Fresh spinach doesn't like me but I still indulge and pay the consequences later.

I paid a price for skipping lunch, not enough liquids then trimming the rose bushes in the sun. Egad. Shaky, sweaty, nauseous, then began to see white spots.

I barely made it into the house. Damn. I'd scold anybody else who did such a thing.
Shame on me.

Honey, consider yourself scolded!  I know YOU know better, but it just happens.

Get in some extra H20 today and take it easy. Hope Tom gets better soon, this has to be wearing on both of you.

   This is your scolding..!!!!!!  You are beginning to sound like me and believe me YOU DON'T WANT TO GO THERE !!!!!  You won't like getting these monthly shots and carrying a glucose meter and tablets with you..so EAT !!! and get in more water...PLEASE take care of yourself...

   Cause if I end up in the hospital again whose going to come and visit me????

   Love you and Tom..... stay well...guess he better stay off that foot...
   See you on Monday night...then my week from helll begins again...

The salad sounds wonderful. Thanks. I've got a salad that I make all the time.
Fugi apples, 3 large cubed
celery diced
walnuts
red or green grapes cut in half
1 small container light strawberry yogurt.
Mix all together and let sit for about 1/2 hour before serving.
It's like a waldorf salad, but use light yogurt rather than mayo.

It is what it is.
If He brings you to it, He'll bring you through it...
