Good morning one and all!

My boat's paddling along, not a speed boat by any stretch of the imagination...lol. I didn't get home until almost 8:00 last nigh, so I just had some soup for dinner.

I need a vacation.


Here's yesterday's menu

mini quiche, mini bagel
cottage cheese/applesauce
2 baked egg rolls
yogurt/ LF granola
SBD fit bar
hot and sour soup.

Will check back in later. Hope you all have a Jim Dandy day (who the heck is Jim Dandy, anyway?)

Well, I'm remorseful for what I ate already this morning.  Poor planning on my part.  I bought a berry danish and ate the center out.  The coffee vendor in our building only stocks pastries.  It was too easy.

So the rest of the day will look a lot better.

B-1/2 cup diced peaches (besides the danish)
L-Wendy's chili
D-chicken and veggies (I'm craving yellow squash or zucchini)
S-a glass of low fat milk

I got in all my vitamins so far this morning and I'm going right now to fill up my water bottle.

It is amazing how a little planning on our part will make your days so much more successful, and less remorseful!

Make a little mental note about how that danish made you feel and bring it back when you're tempted again.

And.....maybe tell the coffee person to have some fresh fruit. Bet you won't be the only one buying it.

I'm thinking I need to start cooking on the weekend and stock up the work fridge for the whole week.
I'll have to look back for quiche recipes and such.  I need that protein in the morning.  That danish did nothing for me.  I will remember that.

Here's how I made the quiches

In a regular, sprayed muffin tin I put in a dab each of:

cooked turkey breakfast sausage ( or you can use Bac-O's)
defrosted chopped broccoli
2% shredded cheese
salt & pepper

Then, all I did was pour Eggbeaters over all of it till it was about 2/3 full. Shake the pan a little to let everything settle in nice and cozy. Bake at 350 for about 25-30 min or until a knife inserted comes out clean.
One of these and a mini whole grain bagel is more than enough for me. You can do any variation you want of veggies or meat, or no meat, or no veggies. Using Eggbeaters Southwestern flavor is great too!

Bev, I make a dozen at a time, keep out 6 and freeze the rest on a cookie sheet so they're individual. Then I either seal them in my seal-a-meal or just a zip lock freezer bag. I take the frozen ones out and put in the fridge before bed and they're ready to reheat in the microwave in the morning. I've found that if you cut them in half before zapping them, they heat (one at a time) in about 30-45 seconds. A bit more if they're still frosty
