Morning Crew mates!

I'm being a slug today. All I plan on doing is some cooking to get things into the freezer for my busy weeks ahead. I already have  a pork roast in the crock pot to make burrito filling out of, will make a pot of un-fried refried beans, a batch of applesauce, some mini bkfst quiches, and some baked eggrolls and pita chips. Freeze batches so we'll have lots of "go to" stuff for the next couple of weeks. I love doing this, and while it sounds like a lot of work, it's actually very theraputic for me.

Here's my Sunday:

1 pancake, 1 egg, scrambled, 2 thin slices bacon
1 grilled chicken soft taco and 3/4 order pintos and cheese from taco bell
meat loaf, corn and 1 red potato
1/3 left over dessert crepe from Sat night's dinner.

1/4 c LF granola

Better on the fluids, but still not great. Will catch up today for sure!

D - Something picnic-y, going to my last scout function for the summer and it's a leaders picnic.  I'll probably have a cheeseburger, no bun, with lots of ketchup and relish on it.
S - Glass of Chocolate Milk - need something to put my Benefiber in.

I got Vitamin D3 gels since my Vit. D has been so low.  Love them because they are tiny.  I'm feeling so much better since my unfill.

B: Eggs, cheese, onions, green peppers, ham scambled all together...YUM!
S: apple
L: pot roast, half of mashed potatoes/gravy, corn

  How do you make your pita chips???  I need some good carbs..bad ones are out.  I'm having a problem with dumping and reactive hypoglycemia...so fruits and some veggies have been giving me problems.

Oh Marcy, they're sooooo easy!

Take how ever many pita breads you want, cut them into triangles and split them in halves. Preheat oven to 375 and spread the triangles out on a large baking sheet. Spray tops with non-stick spray, then sprinkle w/ salt. Turn them all over and repeat.

Bake for about 8 minutes, and check them. I like to turn them and bake for a few more minutes to make sure they're crispy.

You can also use Orowheat Sandwich Thins, they're a little thicker, but if you count one sandwich thin cut up (into about 8 triangles) they're only 100 cals. AND they come in whole grain, so you get some good fiber too.

Hi Susan....trying to eat....not much luck.

Still no word about Nic's results....this is so scary. I am just sick to my stomach!!
