Hi there,

Just a quickie to get the thread going. I'm still having some computer troubles, but not like the other day. Seven hours on the phone w/ tech support!  It was all I could do to even sit in front of the computer after that, I can tell you!

I may be able to reload and restore my Fitday account, so I'm just winging it for now. Scary, scary thought. 

Yesterday:

greek yogurt w/ special k LF granola
protein bar
crustless calzone, orange
cottage cheese w/ peaches
Wendy's grilled chicken wrap, no sauce.

Confession time......When I went to Wendy's to get Gary's chili and my Go Wrap, they put in an order of fries by mistake. When I told the lady at the window that she gave me fries, she said to keep them. Sure enough that equated to "you can eat them" in my warped mind. So, I ate half of them and threw the rest out the window for the birds. Half is better than all, but still not good.

How are things going for all of you?

Carrot Cake
 
Description

Carrot cake is a perennial favorite, but it is often loaded with vegetable oil and laden with a cream cheese frosting. Our version is healthier, using a small amount of olive oil, a full cup of honey for moistness and flavor, and a combination of whole wheat pastry and unbleached flours. The crunchy walnuts even add a bit of omega-3 fats to this sweet treat. With a cup of hot green tea, this cake will make you forget about cream cheese frosting. Enjoy!

Food as Medicine

Carrots are excellent sources of vitamin A, and good sources vitamin C, vitamin K, fiber and potassium.

 

 
Ingredients

2 cups firmly packed finely grated carrots
Juice of 1 large orange
2 teaspoons vanilla extract
1/4 cup light olive oil
1 cup honey, liquefied in microwave (30 seconds)
1/2 cup crushed or chopped pineapple, drained
1 cup unbleached white flour
1 1/2 cups whole-wheat pastry flour
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon ground allspice
3/4 cup walnuts, chopped

 
Instructions

1. Preheat oven to 350°F.

2. In a mixing bowl, stir together the carrots, orange juice, vanilla, olive oil, honey, and pineapple until well blended.

3. In another bowl, stir together the flours, baking soda, and spices. Mix in the walnuts.

4. Blend the dry ingredients into the carrot mixture, stirring until just mixed.

5. Pour the batter into a nonstick 8-inch-square baking pan and bake for 45-60 minutes until a knife inserted in the center comes out clean. Remove from oven, let cool slightly, and remove from pan.

S- Protein Powder, 1 sm Apple
L- Salmon 4oz, carrots, bulgur wheat pilaf,
S- 1/2 banana w/PB on lite wasa, coffee, 10 gr 85% dk choc
S- Protein Powder w/fiber 
D- Egg Whites with diced veg added, toast, cantaloupe

breakfast: plain yogurt with a banana and some granola

Lunch: Leftover chef salad (local smokehouse makes it with their brisket, ham, sausage and hot links!)

Dinner:  I'm thinking fish!

Hello, everyone!

I'm actually at home all day today. DOWN THREE POUNDS THIS MORNING!

So far I've done alot of phone work, checked Mother, did all my email work, wrote several reports for BPW, sent  some invoices out for services rendered, watered my houseplants, cleaned the litter boxes, fed & watered all my insde and outside animals, checked my irises, cut a huge bouquet of lilacs, ordered my dinner at Miom's place for tomorrow's visit, dusted, tidied up, filled ishwasher after unloading it, cut fresh asparagus for dinner, thawing chicken breasts for tonight, updated my daybook, sent a letter to several cousins, rodered renewal of my prescriptions, did office work,  and I still havent done my vacuuming!

This is today's menu:

B   hot chocolate protein drink

s   banana w/ peanut butter

L   turkey kolbassa & cheese

S   almonds

D   steamed asparagus & chicken

S   likely turkey kolbassa & chees

all my supplements taken...working on 3 litres of water
