Howdy folks! Hope you're ready for the weekend because it's just about here. Our weather is going to be really bad, so there won't be any walking or yard work for me. Darn!

Here's a recipe that looks really good. Hope you like it!

Turkey Apple Wraps
A delightful change, light and creamy with an added sweet crunch.

Servings: 4

‹ Back to Sandwiches

• 1/4 cup fat free mayonnaise
• 1 tablespoon Dijon mustard
• 1 medium red apple, cut into thin strips
• 1 teaspoon lemon juice
• 4 large fat free flour tortillas (8 to 10 inch)
• 4 large green or red leaf lettuce leaves
• 8 ounces left over turkey, sliced
• 4 thin green onions or chives
• 1/2 cup grated carrots

Combine mayo and mustard in a small bowl, toss apple with lemon juice to prevent browning.

Spread a generous amount of mayo mixture over each tortilla.

For each tortilla, layer a lettuce leaf and about 2 ounces of sliced turkey on top.

Place 1 green onion, 2 tablespoons carrot and one quarter of the apple strips at one end of the tortillas.

Roll up and secure with a toothpick.

Hi Susan,
I think some of the storms that started out west are making there way here....we have grayish skies and expect rain later today and tomorrow.

I lost another 1.8 pounds this week.......  I'm not trying to lose any weight.  I still think this is from the swelling going down after my surgery.  I fully expect to level off again in the next week or so.  But just in case I am going to up my food intake by a little bit....not too much.  Like an extra piece of fruit or something.

Todays plan
B- Cereal and 1 banana
S- Protein drink w/fiber, 1 small apple
L- Meatballs and 1/2 cup pasta salad. 1/2 pear
S- PB & 1/2 banana on a lite Wasa cracker, 10 gr 85% dk choc, coffee
S- 12 Almonds, Maybe another Protein drink or bar (If I'm feeling full I'll skip the protein)
D- Tilapia, asst grilled veg

Have a great day!!
