Rowing down the river together. What's on your menu?
Not much going on here, just sailing along as usual. Yesterday ended up being a pretty heavy carb day, something that I have to watch, even though the nut said (18 months ago) that 50% of my calories should come from carbs. I still am not comfortable with that high of a number. My weight has stabilized at 135 now for about 2 months, so maybe this is where I'm supposed to be. Can't wait for the next consult with the Nut on the 18th of May.
Here's what I ate yesterday:
strawberries and cottage cheese w/ mini bagel
PB&J
1 baked chicken thigh
navy bean soup w/ 1 slice beer bread
SF FF pudding cup
orange
16 All Bran crackers
cals: 1216 fat:28 carbs: 177 fiber: 28 protein : 90
The recipe for today is for Panko Baked Chicken Strips . If you haven't used Panko, they are Japanese bread crumbs that are super crunchy and light. I'd let these cool completly before storing in an airtight container to keep the leftovers crispy
Are you yearning for something crunchy? Tired of broiled, sauteed and pan seared. Try oven frying it with panko. It has the crunchiness you are looking for.
Panko Chicken Strips
Serves 3
1 1/2 cup buttermilk
3/4 cup panko
1/4 cup grated Romano Parmesan cheese blend
1 tablespoon finely chopped fresh parsley (optional)
1 teaspoon garlic salt
1/4 teaspoon black pepper
1 1/4 - 1 1/2 pounds boneless skinless chicken breast tenders
Olive oil cooking spray
Preheat oven to 400 F; have ready a baking pan that's been lined with foil that is nonstick (like Reynolds Wrap Release; Kroger also has their own brand)
Mix panko, cheese blend, garlic salt and black pepper and place in shallow dish.
Place buttermilk in a shallow dish.
Dip breast tender in buttermilk and roll in panko mixture. Place in prepared baking pan. Light spray with cooking spray.
Bake in preheated oven for 20 to 25 minutes, or until chicken is just cooked through and panko begins to brown. Turn once half way through cooking.
Serve with your favorite dipping sauce.

I'm trying to stay on track. Stress is as much of an eating trigger for me as boredom is. Fortunately, I don't give in to stress very often.
Now that I'll be a woman of leisure, I plan to try some of the recipes that Susan has been posting. Most of them sound simple and tasty. Maybe I can stop relying so much on the crock pot.
I keep losing and gaining the same three pounds. Could be worse, I guess....
