Good golly it's morning! 

Yesterday I went to Barnes & Noble to cash in on a gift cert I received for my birthday. I really have been getting back into finding some healthy new cookbooks and found three!  Two by Hungry Girl, and one by Rocco Dispirito, who I think is the chef from Biggest Loser (I've never watched it, so not sure. Guess if I read more of it than the recipies, I'd know....LOL).
Any how, I'll be sharing some of these with all of you so we can try them together. Lots of the recieps from Hungry Girl are for 1 or 2 servings, which is SO perfect for us!


Scoopable Chinese Chicken Salad

1 16 oz bag broccoli slaw mix
12 oz cooked skinless chicken breast, chopped
1 c canned water chestnuts, drained and sliced into thin strips
1 c canned mandarin orange segments, packed in water or juice, drained and chopped. If packed in juice, rinse, too
1 c chopped scallions
3/4 c Newman's Own Lighten up! Low Fat Sesame Ginger Dressing

In a large bowl, toss all ingredients together until mixed well. Refrigerate for at least 2 hours. Stir well before serving.

Makes 5 servings

Serving: 1 1/2 cups each.  Cals: 195  Fat: 2.75  Carbs: 21  Fiber 4.5  Sugar: 12.5  Protein: 22.5

I think I might use fresh oranges and maybe toss in some chopped almonds or pecans. Maybe some craisins???  Hmmmm can't leave a recipe alone!

Yesterday's menu wasn't too bad, still lower than it needs to be. Damn

latte, protein coffee

2 LF Eggo waffles w/ PB&J

Taco Bell fresco taco, 1/2 order Pintos, no cheese

Grilled fish taco w/ Mexican slaw

SF, FF pudding

a few more protein coffees, and 88 oz water.

cals: 1078  fat: 30  carbs: 132  fiber: 29  Pro: 89

Hi Susan!

This recipe sounds so good.  Going to try it.

I did pretty good yesterday but ugh.. got on scale and gained the two pounds I lost.  Go figure.

Here is my menu from yesterday:

Coffee
B- Proetein drink/half banana
S-
L- Chili
S-Protein drink
D- German sausage and a salad.
S- Atkins food bar.

Going to lunch today.  I hope I can get some thing healthy!

I ate like a piggy yesterday. Small amounts, good stuff but jeepers, just ate.

The past few days food has been a chore. After Tom's appointment I ate.
We get the biopsy report today or tomorrow. His doctor is quite concerned about the VERY high BP. Today I am buying a BP cuff and will take it myself. Even if I have to hog tie the man.

Plan for today
B - cottage cheese, berrie Kashi
L - deli ham & green beans
D - chicken & more green beans
S - apple & pb

Nothing yet on the biopsy and his BP is sky high tonight. He didn't object when I said we would buy a BP machine today. Nor did he complain about taking it twice a day. Didn't need to threaten at all. Scarey.

Hmmm. Well, gee, don't know what to say to that. Glad he has sense enough to know when he's been out numbered. I know you'll take good care of him, just make sure you take care of yourself in the process.

P.S. I'm resisting those damn Cinnamon buns!! None yesterday and none today either...the are evil I tell you!!!!!!!!!!!!!!

Hello!
Can't believe I forgot to post this when I was on earlier.....

Todays food plan:

B- Oatmeal
S- 1/2 apple and 1/2 banana
S- Protein drink w/added fiber
L- 2.5 oz of meatloaf, grilled zucc, stewed spinach, 1/4 cup lentils, 1/4 c plain yogurt, 3 big strawberries
S- Yogurt (a fiber one key lime yogurt)...I may add a scoop of vanilla whey protein...not sure,
D- something light because I'm feeling very stuffed right now....maybe some cottage cheese or egg whites.

Hope you enjoyed your salad...it sounds yummy....especially with the craisins and pecans!
