Morning!!!  Hope everyone is doing well today. It's just beautiful here, and during a big break in my day I plan on a nice walk. At least a mile, maybe two. We'll see.

Here's a nice recipe for Garlic Lime Chicken. I think it could be one of those things that you cook one day and have in the fridge for a week of lunches. I'm seeing it on top of salads, maybe even mixed with some plain Greek yogurt, chopped celery and onions for sandwiches.


Garlic Lime Chicken
Increasing or decreasing the cayenne controls the heat in this entree..

Servings: 4

• 3/4 teaspoon salt
• 1/4 teaspoon black pepper
• 1/8 to 1/4 teaspoon cayenne pepper (depending on desired degree of heat)
• 1/8 teaspoon paprika
• 1/4 teaspoon garlic powder
• 1/8 teaspoon onion powder
• 1/4 teaspoon dried thyme
• 1/4 teaspoon dried parsley
• 4 boneless, skinless chicken breast halves cut in strips (or use chicken tenders)

• 1 tablespoon olive oil
• 2 teaspoons garlic powder
• 3 tablespoons lime juice

In a small bowl, mix together salt, black pepper, cayenne, paprika, 1/4 teaspoon garlic powder, onion powder, thyme and parsley. Sprinkle spice mixture generously on all sides of chicken breasts or chicken tenders.

Heat olive oil in a large heavy skillet over medium heat. Sauté chicken until golden brown, about 6 minutes on each side. Sprinkle with 2 teaspoons garlic powder and lime juice. Cook 5 minutes, stirring frequently to distribute the juice and garlic sauce.

Per Serving: 299 Calories; 6g Fat (20.0% calories from fat); 1g Saturated Fat; 55g Protein; 2g Carbohydrate; trace Dietary Fiber; 137mg Cholesterol; 554mg Sodium. Exchanges: 0 Grain (Starch); 7 1/2 Lean Meat; 0 Fruit; 1/2 Fat.

Yesterday was okay. I went over 1400 cals, geeze, can't get this right to save my life. Oh well. Here it is.

B: Atkins Mocha Latte Shake with lots of ice
S: apple
L: chili
S: Clif bar with 6 almonds for added crunch
S: orange
S: banana while I volunteer my time filling in for one hour for my volunteer at the gym.
S: apple on my ride home after seeing my MIL and Aunt...I know I will be hungry and gotta "nosh" some before dinner...
D: Well it will be later so my plan is to have another Atkins shake unless hubby made something that is low calorie and  high in protein.
S: if needed another Atkins shake

Hello Susan....I like the recipe but I don't like lime...would have to leave that out.

B-High Protein Shake

D-steak with green beans

Snacks....too many to mention...hard time for me right now. I will try to do better today.

Hi Susan, Debbie and Connie.  Hello everyone else yet to come!

Great sounding recipe.  Will definitly will have to make that one.  I love lime - Connie!

Connie, you sound a littl under the weather.  Hope everything is ok.

Yesterday I did pretty good getting all my protein in.

Coffee
B- Protein drink/ half of banana
S- a few strawberries
L-Salad with turkey , cheese, sunflower seeds, beets, and what ever else I could add for protein
S- Protein drink
D- Brat and a salad 
S- Oatmeal, which I was surprised it filled me up and I did no other snacking.  I did throw about five raisins in it too.

That's it!!!!!!!!!!!

Hi,
Thanks for the chicken recipe.  Sounds good....I'll have to wait a couple days cause I don't have any lime in the house but I will try this....probably on Friday.

Today:
B- oatmeal
S- 1/2 apple
S- Protein w/fiber
L- 3 oz Chicken - my version of Indian chicken, broccoli, 1/4 cup rice, 1 or 2 clementines (love them!)
S- fiber one cereal with milk, 1/2 pear, coffee, my daily 10gr 80% dk choc
S- Protein , 12 almonds
D- Egg white omelet with chop veg, 1 slice whole wheat, grapes

What is albondigas??
