Here's my recipe for today. Asian lettuce wraps. Great with leftover baked/broiled chicken. I'm sure you can make the stuffing ahead of time and use it for lunches during the week. I'm going to give it a try.
Asian Chicken Lettuce Wraps
You won't want take out again!

• 1 tablespoons vegetable oil
• 1 tablespoon finely chopped peeled fresh ginger
• 1/4 to 1/2 teaspoon salt
• 2 green onions, chopped thinly
• 2 boneless, skinless chicken breast (about 1 pound), cut into 1/2-inch pieces
• 1 - 8 ounce can sliced water chestnuts, rinsed and chopped
• 1/4 cup purchased Hoisin sauce (I prefer House of Tsang)
• 1 1/2 teaspoons Worcestershire sauce
• 1 teaspoon unseasoned rice vinegar
• 1/2 cup finely julienne (very fine match stick pieces) chopped carrots
• 12 large leaf lettuce leaves
Heat a wok or a 12-inch heavy skillet over moderately high heat until almost smoking, then add oil. Add ginger, salt, and 2 tablespoons chopped green onions and stir-fry about 35 to 45 seconds. Add chicken and stir-fry until just cooked through and no longer pink, about 2 minutes. Add water chestnuts, Hoisin sauce, Worcestershire sauce, vinegar, and carrots and stir-fry until heated through, about 1 minute. Transfer to a bowl and garnish with remaining green onions.
Let diners spoon chicken mixture into lettuce leaves and wrap leaves around filling to eat.

Well like you I am frustrated but not defeated!
I went to my internist yesterday...the good news: all my labs were wonderful and my blood-pressure was great.
The bad news is (and is it really bad? NOPE!) : my weight is 165, okay my lowest was 146 on his chart. We had a long talk and my doctor supports Bariatric surgery 100%. He says now is the time not to feel like a failure...and I don't. My internist was a psychologist before he was an internist so he is great at head issues. I love this man with all my heart.
He told me he would like to see me between 150-155, if I go below that even that is okay.
Slowly but surely I will take this weight off. I will succeed and keep a handle on this weight regain.
I am going back to the basics once again with 5-6 protein Atkins shakes a day with fresh fruit.
The exercise is all good for me and I don't have a problem with exercise. I can do this!
I have all the support in the world, my hubby tries to walk with me when he can and I have lots of workout buddies in the gym. I go to bariatric support group meetings and I am not alone in my struggles. Yepper... I can and WILL do this. I am woman, hear me roar!! LOL

Yesterday was a good day. Did my walking today already. I feel good doing and getting into a routine with it.
I haven't lost any weight either for awhile. Even with the walking. Debbie, I drink two protein drinks a day. Maybe I should up them too.
Although, I need something to eat. So I know just going all day just with drinks would not work too well for me.

I feel your frustration and totally sympathize. That STINKS!
Have you looked hidden salt? I know if I eat more pre-packaged or prepared foods, sauces, can food, etc I can easily gain a couple lbs of water weight. Do you get a lot of hard cheese??? Cheeses can be very salty too.
How about your water....are you drinking enough?
I hope the "nut" sheds some light on it for you.... meantime don't get overly frustrated this too shall pass!

D- not sure....fish if my legs don't hurt too much and I can stand to cook...if they hurt I'll have a protein shake and Matthew will have left over meatball/spagh.
