Sorry I didn't get a recipe posted yesterday, but I have a good one today. It's for a low fat granola that I think might work well for us. It would be great on yogurt, or on some warmed home made applesauce.
Healthy Homemade Granola
Dry Ingredients:
6 cups rolled oats (you can also use a combination of rolled grains)
2 cups of raw almonds and/or walnuts (or other nuts)
½ cup raw pumpkin seeds (or sunflower seeds)
½ cup sesame seeds or flax seed
½ cup wheat germ or ground flax seed.
Optional: ½ cup unsweetened coconut,
½ cup dried fruit (add after cooked) –date pieces, cranberries, cherries, apricots, mango
2 individual cup unsweetened applesauce (about 1 cup total)
1/3 cup agave nectar (or brown rice syrup, honey or maple syrup) (I usually use honey or agave)
2 Tablespoons extra virgin olive oil
1 Tablespoon ground cinnamon
1 Tablespoon ground ginger
½ tsp salt
Preheat the oven to 300°F.
Mix the dry ingredients in a large bowl. Mix the wet ingredients together, and then stir into dry ingredients. Stir well to mix thoroughly.
Spread the mixture into two baking dishes. Bake for 35 – 40 minutes, or until evenly golden brown. Stir every 10 – 15 minutes to ensure even browning. If you use fruit, stir once it is cooled. Store in the refrigerator.

latte---FF, SF, x 2
baked french toast
protein coffee
1/2 corned beef sandwich
protein coffee
1 bar-b-q rib, 1/4 c baked beans, 1/4 c coleslaw
applesauce w/ low fat granola
cal: 1193 fat: 31 carb: 123 fiber: 8 protein: 105

this is a great recipe...I love granola.
Can I use sugar free maple syrup instead of honey? I dump badly and don't want to chance using honey or agave!! Can agave make you dump like sugar? Where can you buy it..or in your opinion should I stick to the SF maple syrup or I can use DaVinci sweetner which is SF. I could use your opinion with that.
The cheesecake was great!!! Not the same texture as real cheesecake as I didn't bake it. Crust was lucious. Filling still needs a little tweaking..maybe need to add more pudding mix or unflavored gelatin. I'll have to wait and try again next holiday or around my birthday.

I don't know why you couldn't use the maple syrup or DaVinci. I'm not sure about Agave, but it is fructose. You probably wouldn't use more than a few tablespoons at a time on yogurt or applesauce, but then, I don't know how much it takes for you to dump. It takes a LOT for me to dump, unfortunately!

I use 1 heaping tbs of vanilla powder mixed with some SF french vanilla creamer. Then I add my instant coffee and stirring while I add boiling water. Kind of tastes like my latte, but without all of the carbs from the milk.
I don't know why you couldn't make it cold. You'd just have to let the instant coffee cool first.

I'm unsure of my food for today....I feel full........and I don't like that feeling.....I'm sure some is the after effect of surgery (you know the whole constipation thing) and some because I'm just not as active as i normally am so I have no appetite. I'm focusing on protein and fiber today
B- Oatmeal
S- 1/2 apple
L- Broccoli with a little shredded roast beef, tangerine
S- Fiber one and cottage cheese, 1/2 pear
S-Protein Shake w/added fiber
D- Egg whites with broccoli omelet
I'm not usually "uninspired" when it comes to food but I just have no interest in it today....
I'm sure I'll back to normal tomorrow.
