Good morning!

I'm all about doing most of my cooking on one day for most of the week. I get too busy and sometimes I have to stay late at work, so having things in the freezer or fridge that we can grab and go is important to me. If I have food that are good choices ready, I'm less likely to eat junk. Not that we keep a lot of junk in the house, but you get my drift, right?

This recipe is for a baked egg roll. It makes 15 rolls, and can be frozen before cooking.

Yesterday was an "okay" day. Not great, but not all that bad.

latte, protein coffee

steak and cheese quesidilla

baked french toast, 2 slices bacon

applesauce and cottage cheese

1/3 Ruben sandwich, 6 shoestring fries (baked)

applesauce w/ special k low fat granola

Cals: 1078  fat: 29  carbs: 117  fiber: 7  protein: 87

A baked egg roll?????Like a Chinese egg roll?? You've peaked my curiosity........

Food today:

B- Oatmeal
S- 1/2 apple
L- 3 oz Chicken breasts (diced, cooked with peppers/onion/tom/spices), 1/4 rice, 1/2 pita pocket, carrots
S- PB on lite wasa, 90% dk choc, 1/2 apple, coffee
S- Protein shake with fiber, 12 almonds,
D- Not sure yet....maybe fish or maybe an egg white omelet with zucc and cheese

I have a hankering for a big juicy burger....haven't had this thought/feeling in at least 18 months.....I wonder if it's 'cause my iron is a little low.  Anyhow Since I'm not doing anything like a traditional Easter meal I may make some nice big burgers for lunch tomorrow.

Well, you should know I'm EATING....

but had a hot dog, fish, roll, beans, 1/2 new potato, a few chips, and iced tea. that's it for me.

Oh, and the fish I ate was in my Avatar.... caught it today... 3.2 lbs...grilled.

Gary and I were just talking about how we really miss deep sea fishing. Honestly, if you were to ask me what the one thing from San Diego I miss the most, it would be fishing.  My biggest was an albacore that weighed in at about 30 lbs. I don't know if I could bring one in that size again. It was amazing!

My menu from yesterday

Coffee

B- Protein drink/ half of banana
S- Rice Cake
L- Turkey and cheese roll up - a few strawberries
S-  Strawberries and a few nuts
D- Eggs and sausage
S- Rice cake and a few cashews

That is it!
