Good morning Crewbies!

Have you  ever just had a "day"? A day you just want to forget? Well, that was yesterday as I kind of ate my way through it. My schedule got all out of whack, which is NEVER good for the plan, as the "plan" is the first to go out the window. Oh well, today is another day and as busy as I'll be, there won't be much time to do anything but work.

Here's the recipe for today. I'm short on time, and this is a quick one to write down, and super, duper easy to prepare. Great for those not too far out from surgery as the chicken is super tender and easy to eat.

Crock pot salsa chicken

3 boneless/skinless chicken breasts, or 4-5 boneless/skinless thighs. Whatever chicken you have around is fine!
1 chopped onion
1 12 oz jar salsa. Any kind you like ( gee, I'm not sure on the size of the jar of salsa, just the regular ol' size jar)
salt and pepper to taste

Toss the onions into the crock pot, add the chicken, pour the salsa over all of it. Add salt and pepper and cook on low all day.
When you get home from work, take two forks and shred the chicken. Can be made into burritos, tacos or just eaten as is.

Here's my menu as I start the day. We'll see what happens by the time the day is over. It will be a really long one, probably won't get home until arou 7:30 or later.

latte, protein coffee

crustless calzone, mini bagel

orange and string cheese

tuna patty sandwich

cottage cheese w/ applesauce

couple slices of meatloaf

Good morning Susan and OH buddies:

That crock pot salsa chicken sounds great and so easy.

Woke up feeling entitled to a day off and almost called in sick, but decided against it and here I am, almost an hour early for work.

Here is today's plan:

B - Grilled cheese sandwich with very thin bread and 2% cheese
S - don't know
L - Wendy's chili
S - 1 oz nuts
D - Turkey spinach casserole (still have oodles of it in the freezer)
S - SF hot chocolate

Trying to keep body and soul together till Monday morning's surgical consult.

I love the crock pot chicken.  My variation of the recipe calls for a can of uncondensed cream of mushroom soup poured over the chicken at the start, then the salsa.  Just as I take it off the heat, I add 1/4-1/2 cup of sour cream (fat free is fine), then chop up the chicken or shred it.  Gives it a different flavor from the original recipe, I imagine.

It's something that doesn't scream WLS, and I've served it to friends.  I would think either recipe would be good at a party or as a dish to pass.  It's even good at room temperature, and it freezes well in my little containers.

Win-win!

I have a version called "Taco Chicken"
Pretty much the same as yours (doesn't call for onions, but why not put them in -- I use onions all the time)
Put 4 chicken breasts in bottom of crock pot, sprinkle a pkg of low sodium taco seasoning over, then 1 cup of salsa, then 1 can of healthy request cm of mushroom or cm of chicken soup -- cook for 4-6 hours on low.   I add 1 cup of instant brown rice thirty minutes before serving and stir it in.  When ready to serve, dollop with l/f sour cream, or mix in 1/2 cup sour cream.   delicious and very moist.  You can also use the boneless/skinless chicken thighs (probably six or eight).

I usually have one of those days each week, which is why I probably have not reached my personal goal. . .  this journey is never without potholes and your daily post helps keep me on track more often than not, the only thing I can say I did different yesterday was had a half of a bag of Orville Reddenbacher's Smartpop Kettlecorn. . . 

I am not well prepared to today, foodwise. . .  so we shall see how I do. . .

B:  half a multigrain bagel with mozzarella cheese

S:  sliver of banana nut loaf, which I brought into work for co-workers to try, most seemed to like it. . .

L:  L/F L/C Mac & Cheese

S:  Orange/Yogurt

D:  Not sure I will be getting on a plane. . .  so we shall see:  maybe a protein bar

S:  None

Posting from Mariana, northern Florida tonight...78 degrees...JB and I stopped in Panama City Beach and had a picnic lunch on the beach in a cute lil gazebo...still heading homeward, north, as we have to be back home on March 23 for appointments on the 24th.

B   hot chocolate protein drink

L    cheese, crackers, celer stuffed with cream cheese and rolled in sunflower seeds, cold cooked shrimp, freesh pineapple unsweetened)

Aloha darlin..........I've been following your thread, and it's great. My question is what is "protein coffee?" I think I might like that, and it would give me protein where I don't get a lot from things I eat anymore.

HELLLLLOOOOOOOO! We've missed you!  Karen said she spoke to you and you've been really busy, hope that's okay with you?  The place isn't the same without you here, so please come by more often.

This is how I make my protein coffee. It's kind of a hassle when you first start making it, but I have it down to a science. First let me say I bought one of those "frothers", a battery operated stick blender made to foam lattes and such. I got mine at Bed Bath and Beyond for $20 and you couldn't buy it off me for $100!  I love it. Aerolatte is the brand if you want to look for one online. They're tiny, meant to go into a coffee cup. So cute!

Anyway, here's the way I make it. First I put a pot of water on to boil. While that's going, into a cup I put 2 pumps of SF vanilla syrup (Davinci's, or Starbuck's) and a pack of Splenda. Then, I add about an ounce of milk, 1 tbs vanilla protein powder and 1 tsp instant coffee. To that I add about an ounce of not quite ho****er and wisk around with my little frother. You can't just add boiling water to protein powder, it will clump almost every time, at least mine will. Then, after that's mixed well the water should be boiling and I fill the cup the rest of the way.

I have even gone as far as making it up to where you'd add the boiling water and put it into a tiny rubbermaid container and take it to work for later on in the day. It keeps really well in the fridge. One cup is 1/4 serving of protein, about 7 grams. So, if I have 4 of those, either regular or decaf, I get in another 28 grams of protein in a day. Not too bad for something I'd drink without the protein!

You might have to play with it a bit to get it to suit your taste. I've put in a bit of sugar free cinnamon syrup with the vanilla, used SF French Vanilla creamer instead of the milk, and chocolate protein powder instead of vanilla. The key is getting the protein mixed in warm water before adding the boiling water. After that, the sky is the limit!!!

Now, why are you eating things that don't have a lot of protein?  Hmmmm?????  Bet you thought that would slip by me, didn't you?
