Morning crew!

Today's recipe is one that my FIL sent me years ago. He loved to cook and sharing recipes with each other really helped us bond. I miss him a lot, but think of him whenever I make this recipe.

Cuban Black Beans and Rice

Rice:
2 c cooked rice (I use brown)
4 chopped green onions,
1/4 (more or less depending on if you like it) cilantro, chopped
1/2 c jarred salsa
1 Tbs olive oil
1 clove garlic, minced
juice of 1 lime
salt and pepper to taste

Mix all together and allow to chill for at least 2 hours

Beans:
1 large bell pepper, roughly chopped
1 large onion, roughly chopped
2 tsp olive oil
1 Tbs minced garlic
3 cans black beans, drained and rinsed
2 tsp ground cumin
1 bay leaf
salt and pepper to taste
2 Tbs vinegar
1/4 c chopped cilantro

In a large skillet, saute bell pepper and onion in olive oil until they begin to brown. Add garlic and coo****il fragrant. Let cool for about 10 minutes, then puree in food processor. This, by the way, is called sofrito and can be used as a garnish on it's own.
Heat beans in skillet, add sofrito and spices and allow to simmer for about an hour. If the mixture is too thick, you can add a bit of chicken broth or water.� Add vinegar and cilantro, mix� well.
Spoon beans into bowl and top with a nice (1/4-1/3 c) rice mixture.

this keeps well in the fridge for up to 5 days or so. The rice can even be heated for a side dish.

My menu for today:

latte, protein coffee

b--� oatmeal w/ pb and raisins

s-� none

l--IHOP grilled talipia and broccoli� this didn't happen either. Got tied up at the dr's office and had a jr whopper, no onions or mayo

s-� banana and a benefit bar

D---cuban black beans and rice

Guess I need to figure out the better part of my day?

True confession time. I got a bad case of the munchies (haven't used that expression in years!) and finished off 1/3 of a box of Nuthouse Almond Crackers, about 2 full servings of them. Crap. Oh well, now they're gone and there won't be anymore in the house.

I love the recipe and will have to get the ingredients on paper so I can buy them at the store next time I go.  It really sounds healthy and delicious.  Thanks for taking the time to write it all out.

Cottage must either be on sale or on our minds. I just got home with some only to see I still had some in the fridge. Oh well, long days at work tomorrow and Saturday, so guess what my snacks will be?

You can highlight the recipe then cut and paste it to a Word document.  It saves beautifully in Word.

B:  A sliver of the Banana Walnut Bread I made last night (yummo!) and when I got to work, a mini flatout whole wheat with mozzarella cheese melted on it

Golly, Laureen, not so boring. I cooked like crazy on Monday making lots of stuff to have around since I'm working so much. Then, I HAD to make corned beef yesterday, so we'll be eating on all of this for the next week. You'll be seeing a lot of the same things from me for awhile...lol

Just got home from the most boring and freezing training. We were all shivering.

B - cottage cheese, berries, Kashi
L -Almost 2 pm so I'll probably have an apple & pb for now. Just don't feel like a real lunch when I'm so cold.
d - ? Tom wants pizza but I'll probably not induldge. Low on protein at this point today. Hard to catch up.

I used to think getting cold was better than sweating like I used to, but not anymore!  I hate being cold, especially my feet. AGH!

Yes, had the ultra sound this morning, of course the tech couldn't say anything. Then, I had an appt with my pcp and told him all about it. He examined my neck and said he couldn't feel anything at all. The ENT didn't do a thyroid panel, so the pcp did. He said he would have done that before ordering the ultrasound. Duh.....of course, I have insurance!

don't know when I'll know anything. I'll keep you posted.

Sorry to hear you're having thyroid issues. I've had a multinodular goiter for 12 years, but it turned iffy only a couple of months ago.  Good luck with your tests.  Keep us posted.
