Good morning crew mates, it's Wednesday! Not that Wednesday is any different than any other day, but for those M-F folks, you're one day closer to the weekend.
My recipe for today is for tuna patties. I didn't have a recipe (I'm a throw things together cook) but these came out really well. They made 6 good sized patties, and while the leftover ones aren't crispy, they've made great lunches for only about 100 cals each. I topped mine with a slice of 2% cheese to add to the yummyness.
Susan's Tuna Patties
1 lg can white tuna in water, drained
1/4 c minced green onion
1/4 c low fat sour cream
1/4 c Eggbeaters, or 1 egg, beaten
1 tsp dill weed
I added some Old Bay seasoning, salt, pepper and a little garlic pwder. You can add whatever floats your boat, though
1 cup Panko bread crumbs, divided
Mix together with 1/3 cup of Panko, reserving the rest for later. Shape into patties and put into freezer for about 15 minutes to firm up. Dredge the patties in remaining panko and fry in your oil of choice. I used canola oil, just enough to put a little brown on the patties. Cook for about 4-5 min per side, or until lightly browned.
Now, here's my menu for today
latte and a protein coffee
eggbeater cheese omelet, mini bagel
s---orange and cheese stick
l-- Cuban black beans and rice
s--applesauce and cottage cheese
d--of course, corned beef and cabbage!!!

Hi Susan
They are usually by the regualr hams. SOme are wrapped in a red plastic others - a different kind are in clear. They are smaller than a ham. The taste is different then a plain ham. We love it better than corned beef. I cook it in a big pan of water, potatoes and cabbage. The directions are usually on the package.
If you haven't tried it, please do. I am sure you will love it like we do.
They are not sold at walmart. At least not here.

S - string cheese
L - Noodleless lasana
S - Chai tea
D - Turkey-cheese rollup, tomato basil soup
S - SF hot chocolalte
Exercise - Boogie Down the Pounds

The tuna patties sound good. I usually have everything home, so they'd be good for a quick meal.
I'm making pizzelles today as a birthday gift for a male co-worker who loves them and whines because I don't make them often enough. I haven't adjusted the recipe yet to make them WLS friendly, so he's getting them all. The good thing is that I know I won't have to worry about him sharing them, with me or anyone else. Some are green, in honor of St. Patrick's Day.
My food plan today is more of the same. KISS. WLS friendly food is nearby, if I can choke it down. It's been really busy at work the past few days, no time to nosh. And tomorrow is the day for the retirement meeting. I haven't been this nervous since my first date after a 17 year marriage ended in divorce. It's the only time in many years that I haven't turned to food to get me through tough times. My stomach is in knots.

Lunch --Instead of corn beef (which is too fatty for my taste) I'm having roast beef with cabbage and red potatoes and 1/2 a bottle of good beer.
S- Apple
S- Protein shake with added fiber
Dinner- Fish (tilapia or Salmon), broccoli
I might flip lunch and dinner...depends on whether or not we have to run an errand this afternoon. If I do switch the meals I think I'll have a WHOLE bottle of beer....LOL!
