Here's one of the recipes I'm making today. Another meal in a muffin tin that sounds good. It's from this month's issue of OH mag. Can't take the credit for it..lol!
Chili Relleno Pie
Brown 1 lb ground sirloin with 1/2 c chopped onion, 1 4 oz can diced green chilis, salt, pepper (to taste) and 1 tsp chili powder. Coo****il onions are tender
Divide meat mixture into foil cup lined and sprayed muffin tins.
Egg Mixture:
3/4 c non fat milk
2 TBS flour
2 beaten eggs, or 1/2 c eggbeaters
salt and pepper to taste
2-3 shakes of hot pepper sauce, optional.
Mix this until smooth and pour over meat mixture until just covered
Bake at 365 (yes, that's what the recipe says) for 15 minutes or until a knife inserted into center of muffin comes out clean.
1 muffin = 133 cals and 10 gr protein
Today's plan:
Latte
2 mini quiches, 2 thin slices bacon
lunch on the fly
dinner: Cuban black beans and rice

B - grilled cheese with very thin wheat bread
S - 1 oz almonds
L - Turkey-cheese rollups
S - SF chocolate mousse
D - Turkey-spinach casserole
S - SF hot chocolate
Exercise: walk or do a cardio tape.

Pumpkin Bran Muffins
Great as a snack or anytime!

• 1 1/2 cups unprocessed oat bran
• 1/2 cup firmly packed brown sugar
• 1/2 cup all-purpose flour
• 2 teaspoons baking powder
• 1 teaspoon pumpkin pie spice
• 1/4 teaspoon salt
• 1 cup cooked mashed pumpkin
• 1/2 cup skim milk
• 2 egg whites, lightly beaten
• 2 tablespoons vegetable oil
• Cooking oil spray
Combine bran, brown sugar, flour, baking powder, pumpkin pie spice and salt in a large bowl and stir well. Make a well in center of mixture.
In a second bowl, combine pumpkin, milk, beaten egg whites and vegetable oil. Stir well.
Add to dry ingredients, stirring just until moistened. Spray 2 muffin tins with cooking oil spray or use paper liners. Spoon into the muffin tins until each is 3/4 full.
Bake at 425 degrees for 20 minutes. Remove from pans immediately; serve warm or at room temperature.
Per Muffin: 105 Calories; 3g Fat (23.4% calories from fat); trace Saturated Fat; 4g Protein; 20g Carbohydrate; 3g Dietary Fiber; trace Cholesterol; 144mg Sodium. Exchanges: 1 Grain(Starch); 0 Lean Meat; 1/2 Vegetable; 0 Non-Fat Milk; 1/2 Fat; 1/2 Other Carbohydrates.
And then....I think you're the first person to openly admit (besides myself) that you eat liver! I knew there was a reason we're sistahs!

I happen to enjoy liver, I make it with onions that I pan fry in cooking spray, yummo. . . and I try to eat it 2 or 3x a month, so far between that and spinach, I've been able to avoid having to take any iron supplements and that is a good thing, cause the last thing I want is to have to take more supplements (lol). . .
