Hello and good morning from the high seas!
I'm going to try to post some of my WLS collection of recipes everyday. Might not be every day, might not even be a meal, could just be a tip or something, but it might be fun. I think we tend to get into ruts in our eating, like my homemade applesauce. Lordy, I wish I had a buck for every apple I've peeled in the last 3-4 months! I could go visit one of you!
Here's a recipe I found in this month's OH magazine that I tried this week. They're great for breakfast or even an afternoon snack. I made them on Monday and had them to grab and go all week. Easy-peasy!
Muffin Tin Zucchini Meat Loaf
1 lb ground sirlion or turkey
1 c bread crumbs ( I used Panko)
1/4 c nonfat milk
1 med zucchini, grated
1/2 tsp Italian seasoning
salt and pepper to taste
Mix all ingredients together and divide into muffin tins lined with foil liners and sprayed with Pam. Bake in preheated 350 degree oven for 30-35 mins.
Makes 12, 106 cals, 12 gr protein if using beef, 131 cals, 12 grm protein if using ground turkey.
Here's my day:
latte
mini quiche cup, mini bagel
protein coffee
applesauce and cottage cheese
leftover beef and chicken skewer from dinner last night
not sure about dinner tonight yet. Must go to store....yuck!

Under all the stress I have been over eating at night. I don't know why this is happening. I hate it. I brought out a notebok and going to log everything I eat. Starting today. Bet this will help.
Today-

B-Protein drink half of banana
S- Yogurt
L- Cottage cheese
S- Orange
D- Chili
S- Atkins food bar.
I hope this adds up to a good food day.

Honestly, I don't know where I'd be if I didn't track my food on fitday.com! It's one thing to write down what you've eaten, but without the nutritional info I'd be lost. Today I decided to try Starbuck's new Dark Cherry Mocha, nonfat, of course. Well, it doesn't come in sugar free, but I decided, what the heck. Came home (it was yummmmmy, btw), looked it up on Buck's website, and the dang thing had 280 cals!!!!! So much for the rest of my day! See, if I didn't keep track of that, I'd be sunk for sure!
