We had a great support group meeting last night. I took my book "Eat This, Not That" with me to illustrate how calorie and fat laden restaurant food is. Some of the examples are shocking!  It's written by David Zinzenco (sp?) who is the Editor of Men's Health Magazine. He's written quite a few in the series and is worth a look. I'd go to Amazon.com to buy them used, as they are listed at 19.95 if purchased new. His new book, "Cook This, Not That" takes restaurant dishes and converts them to lower calorie/fat versions.  I've tried a few and they're great.

Speaking of recipes, I've decided to post some of my recipes now and then as some of you have asked me about my menus. Here's my chiquilles from yesterday. It's an authentic Mexican recipe that is super easy and one of Gary's favorites. Once you make it, you will discover it's origin. I'm sure some Mexican mom took left over enchiladas and chopped them up, reheated them and there you go!

Susan's Chiquilles

1 lb ground sirloin or lean ground turkey
1 doz corn tortillas, cut into bite size pieces, separated
1 med onion, chopped
2 tsp (or so) chopped garlic
1 10 oz can red enchilada sauce
1 1/2  (or so) 2% Mexican blend shredded cheese
1 sm can sliced olives, optional
2 tsp each; chili powder and  cumin
Salt and pepper to taste

Brown ground beef and onion in a large skillet, drain off excess fat. Stir in garlic and coo****il fragrant, do not let it brown. Add tortillas, seasonings and olives, if using. Pour enchilada sauce over tortilla mixture and stir well to combine. Get everything nice and hot,sprinkle cheese over mixture, cover pan and shut off heat. Allow to stand for 10 minutes or so until the cheese is all melty-gooey.

Serve with sour cream, salsa, chopped green onions, guacamole, or top with an egg for breakfast.

Serves at least 4.

south beach veggie cup

leftover beef and broccoli, brown rice

tuna patties, mashed sweet potato

snacks?????

Here is today' plan:

(Green font = done)
B - Oatmeal with flax meal, wheat germ, milk and honey
S - nothing
L - Fabada Asturiana (White bean soup with blood sausage)
S - 1 oz almonds
D - Turkey-Spinach Tex Mex casserole
S - Don't know yet

Had to do some editing. The school sent another teacher and I to SW Miami to pick up some testing materials, and we stopped at a favorite Cuban restaurant. Could not eat anything on the menu except the bean soup, but it was delicious.

Exercise:� Boogie Down the Pounds video at 5 a.m.
��������������� Abs, arms and butt this evening.

I love Mexican food, it's my favorite! That sounds yummy...

L: I'm running to get my nails done so will probably grab some chili when I return

D: don't know yet, maybe hamburger patty without the bun and veggies or a salad

It's kind of a crazy day for me today...on the go but finally glad Friday is here!

Today I'm again planning to try out some new recipes.  It never happened the last time I planned it.  I think I ended up cleaning the house instead.  Yuck. 

Boredom is setting in, and that's when I tend to eat things I really shouldn't, and I graze.

I know I don't post on this barge thread every day, but I do read it, and it seems to be keeping me on rack a lot better.  You're never supposed to swim alone, and I guess the same goes for paddling, in my case.

Today I have no big plans.  It's my only day off this week, and that in itself make it a bit of a free for all.

Meals will consist of cottage cheese and fruit, meatloaf, grilled turkey/cheese sandwich, tossed salad, leftover rotisserie chicken, cheese sticks, yogurt.  In some combinations.  As long as I have those staples on hand, I'll do OK.

I'll keep paddling.  It sure beats swimming alone!

L:  Some seafood salad I made this morning with shrimp and the fake crab, celery, red onion, lf mayo and seasoning and some avacado

S:  SF jello w/fresh fruit in it

Good morning friends

It must be mexican week everyone seems to be endulging in this cuisine.

My days plan

Breakfast - Oatmeal with bannans and blueberries...no walnuts today I ate them all

snack - string cheese

Lunch - the left over carne guis...something , I had last night.  It is like a stew with very tender beef     and potatoes.  I only got a couple of small cubes of potato so it is mostly beef in a thin tomato gravy.  It came with beans and rice which I ate a bite or two of and left behind in the restaurant.

snack - humas and lavash ( a thin bread use to make wraps)  ww and low carb and fat

dinner - I'll be at the rodeo so probably a hamburger without the bun.

Yesterday I did ok.  I didn't eat the snacks I'd planned but did eat a few Staci's simply naked pita chips (baked) late late as I could not sleep and that's my problem time.  I am sure that chips at 2:30  a m is not a good thing.
