High protein recipe: Turkey spinach casserole

Found this in my local paper. Tried it and liked it a lot. It can also be frozen and then "zapped". I used turkey but I think ground beef would work equally well.

Makes 8 servings.

1 lb ground turkey

1 onion, chopped

1 can cream of celery or cream of mushroom soup

1 lb frozen spinach

1 tsp salt

1 tsp pepper

1tsp minced garlic

2 eggs, beaten

1 lb shredded mozzsarella cheese

Preheat oven to 350. Brown ground turkey and onion, then drain. Stir in soup and bring to a simmer. blanch spinach until tender and then drain. Add salt, pepper, garlic and eggs to spinach and mix well. Lightly coat a 9x13 baking dish with cooking spray. spread meat mixture on the bottom of the dish. top with spinach mixture. Sprinkle with cheese and bake for 25 to  30 minutes til cheese is melted. 342 calories per serving, 26 grams of protein.

That recipe rocks!   I made it last night and it was one of the most satisfying meals I've had in a long time.

I'm thinking of making a Tex-Mex variation next week.  I'll keep you posted.

Hi Karen:

Your Turkey/Spinach casserole was a real life saver.� I froze most of it in individual servings and plan to nuke them as needed.

Here is the Tex-Mex version I told you I was going to try.� Hope you don't think I'm ripping off your recipe, even though I sort of am.� I'm thinking of an Italian version...will let you know how that goes.

Turkey-Spinach Tex-Mex Casserole
1 lb ground turkey
1 envelope taco seasoning
1 onion, chopped
1 green bell pepper finely diced
1 can cream of chicken soup (Healthy Request)
1 lb frozen spinach
1 tsp salt
1 tsp pepper
1tsp minced garlic
½ cup Eggbeaters Southwest flavor
1 lb 2 % Shredded Mexican 4 cheese mix or Cheddar cheese
1. Preheat oven to 350°F.
2. Nuke spinach and drain WELL in a colander or large strainer. The drier the better.
3. Brown ground turkey, drain and set aside
4. Spray frying pan with nonstick spray and sautee onion and peppers until soft (only a couple of minutes on medium heat)
5. Add the turkey and the taco seasonings to the onion/pepper mix, stir just until mixed.
6. Add cream of chicken soup and stir, take off the heat immediately.
7. In a bowl, mix spinach, Eggbeaters, salt, pepper, garlic and mix well.
8. Lightly coat a 9x13 baking dish with cooking spray
9. Spread meat mixture on the bottom of the dish, top with spinach mixture, sprinkle with cheese and bake for 25 to 30 minutes till cheese is melted.
Makes 9 servings 304 calories per serving, 23 grams of protein, 7 carbs. (If 10 servings 274 calories, 21 gm protein, 6 gm carbs)
