DISAPPEARING BUFFALO CHICKEN DIP

2 cups diced or shredded cooked chicken, 1/4 cup cayenne pepper sauce (I used a bit less), 1 cup Best Foods mayo. (I used the real thing but I'm sure  you could use light or fat free), 1 cup shredded cheddar cheese,2 TBSP finely chopped green onions, 1 tsp lemon juice, 1/4 cup crumbled blue cheese ( I used Mexican blend instead)

Preheat oven to 375. Toss chicken with pepper sauce. Stir in remaining ingredients except blue cheese. Turn into 1 1/2 qt shallow casserole , then sprinkle with Blue cheese or Mexican blend. Bake uncovered 20 minutes until bubbling. Serve hot with celery, carrot sticks or chips.

I found this in a magazine and made it for friends. It was delicious. We dipped with celery and carrot sticks. Chicken really needs to be mixed with something for me to be able to eat it.

Karen, is that 1/4 c of something like Tabasco?  WOOOHEEEE  it even sounds hot

I may have to save this for some time when we have a party at work, of course I'll have to take all the heat (well, most of it) for these light weights I work with.

I'm kind of a wimp when it comes to hot sauce so I cut it way back. Season it to your taste. It was great on celery sticks! Tabasco is what I had on hand too.

Hey Karen!

Now that sounds delicious! I copied and saved that recipe.  I'm not into HOT HOT stuff but it sounds easy to adjust the "fire"!

Now I have to figure out the values: pro, carbs, fat, etc.

Aloha sweet friend.....I will copy and paste that into my OH recipes for sure!~ Sounds like something good to take to a pupu party.

Would you believe I'm just about to walk out the door to go on a whale watching boat? A group of us are going at 8:00 a.m. out of Maalaea Harbor. The whales are here big time.....and we see them breaching all the time. I hope we get to see some up close and personal.

So little time lately.....I miss you, and so many others!!

We make something similar. My son has "perfected it" in his own way.
Heres his basic recipe

Some sauted onion
1 large can of chicken breast
1 large block of cream cheese
1/4 cup OR more of Franks Red Hot sauce

Soften the cream cheese in the microwave, add the chicken, onion and Franks Red Hot. Put it back in the microwave to heat the whole thing up.
If you want to be really fancy you can put the whole mess in a oven proof bowl and warm it in the oven.
As you can see, 17 year old boys CAN cook when they want to. They just shorten the recipe and the cooking times to adapt to their hunger level.

I tried it   LOVED IT 
Here is what i did.  I took a Roitessire chicken from walmart and removed skin and shredded it ,  I added mayo, a reg onion chopped , 1/4 cup of Wing sauce anf the shredded cheese   NO BLUE CHEESE for me ....Mixed it then added shredded cheese on top and baked it,  WAS delicious
Next time will add a little less wing sauce as it was HOT but then I am a wimp
LOVED the flavor though

Shirley, I think I'll add a jar of marinated artichoke hearts the next time I make it. I love those and I think cut up fine and mixed in with some of the juice that would be a  yummy addition as well. I think it's a recipe that can be played with.
