OMG, you gotta make the crustless calzone!

A couple of days ago, RoseyNo posted a recipe for a crustless calzone. I'm always looking for something different that is good for me, and that Gary will enjoy too.

So, today was the day I made it. It's SUPER YUMMY!!!!

I used frozen spinach as called for, the eggbeaters, not a real egg, but substituted ricotta for the cottage cheese. I had an open jar of spaghetti sauce, not the Zesty one that was suggested, so I just "zested" it up myself with some red pepper flakes, oregano and basil.

This, my friends, is truly a keeper!

im gonna try this as soon as i get to the store to buy the ingredients.  i have not
been eating well at all since all this started happening with my hubby.  i cant
remember when i had a real meal.

this will be a good start with some salad.

Oh Jacki, I feel so badly for you with all you're dealing with. Like Debbie said, it does make a nice amount that will last for many meals. Please take time for yourself. You have to keep YOUR strength up.

YUM, I'll bet it tastes excellent with ricotta.  I think I will have to make this today - lol - It's an excellent recipe for sure!

Thanks for the heads up on having tried this recipe, I too was going to make it with some ricotta cheese, bought all the ingredients, but made some wedding soup and a crockpot stuffed cabbage casserole and just ran out of steam, so I'll cook it up tonight, looking forward to it!

It's a good week night recipe, doesn't take any time at all to put together. I didn't see any seasonings listed, so I added some S & P, minced dried onion and some garlic. Then, on top of the cheese, I sprinkled some basil and oregano. I just can't leave a recipe alone...lol

I might make some stuffed cabbage today. Gary loves it. You make yours in the crock pot?  Do tell?

Yes, Google Crockpot Cabbage Casserole and you will find the recipe, it is different than rolling the cabbage, but same great taste!  I use red peppers and cabbage instead of the green, don't add sugar and the rest is pretty easy. . .if not, wait until I get to work and I'll email it it you.  It is a 4 hour recipe

Susan here is the recipe, as I said, I use shredded red cabbage and red onion, ground turkey meat instead of chopped meat, leave out the sugar and it is a great, easy recipe.

1 pound of ground beef or ground turkey
1 onion , chopped
4 cups chopped cabbage (I used the fresh slaw cabbage--alread sliced up)
1 medium green pepper, chopped (I prefer more of this--tastes like stuffed peppers with more)
1 cup instant rice (I used the instant brown rice)
1 cup water
1 can (6 oz) of tomato paste
1 can (14 -1/2 oz) diced tomatoes, undrained
1/2 cup ketchup
2 tablespoons of vinegar (I used the apple cider kind)
1-2 tab. sugar (I just used 1--for more tartness)
1 tab. Worcestershire sauce
1-1/2 tsp salt (I use much less--more like 1/2 tsp)
1/2 tsp pepper
1/4 tsp garlic powder

In a skillet, cook the meat and onions until no longer pink, drain. Place it in the slow cooker; add the cabbage, green pepper and uncooked instant rice. In a bowl, combine the water and tomato paste. Stir in the remaining ingredients. Pour over the meat mixture and MIX WELL. Cover and cook on low 4-5 hours or until rice and vegetables are tender. Makes 4-6 servings
