Carrot Souffle

We have a Giant Eagle Market District tha makes wonderful Carrot Souffle and my whole family loves it. Its pretty expensive and I didn't know how much fat and sugar it had so i looked up a similar recipe and tweaked it to be friendly for us and anyone else that wants to eat it.
My version turned out very good and i will be making it for Christmas dinner when everone comes over. Tastes more like a sweet potato casserole
 

  • 2 pounds carrots, cut in chunks
  • 1/2 cup butter (I'm going to reduce this to 1/4 cup next time)
  • 4 eggs, beaten
  • 3 tablespoons flour (I used soy flour)
  • 1 teaspoon baking powder
  • 3/4 cup Splenda ( I may reduce this next time time) don't open little packets and measure get the kind in the big bag that measures just like ugar
  • 2 teaspoon cinnamon
  • 2 scoops Vanilla protein powder ( I used Lean dessert)


Cook carrots in boiling salted water until tender, about 20 to 25 minutes; drain well and put into food processor until smooth. Combine  carrots with remaining ingredients; pour into a sprayed 2-quart soufflé dish. Bake at 400° for 15 minutes. Reduce heat to 350° and bake 45 minutes or until center is set.

You'll love it, and kids do too. Don't tell them theres carrots in it. Tastes more like sweet potatoes to me. YUM

I'm always here reading but don't have much to say. I've kept up with everything thats been happening. I think I've put some new pictures on my profile, I'll have to check.

YUM!  This sounds wonderful.  Ever since my RNY, carrots taste so sweet and delicious to me.  I'm definitely going to try this recipe.  Thanks for sharing!

You'll love it. I have a little left over that I hid way back in the refrigerator. Tonight I'm going to warm it up then  and and put a dollop of fage mixed with a little splenda on top.....YUM YUM

It's so good to see you.  I was thinking about you the other day.  One of my co-workers had been to your wonderful city!!  I had to tell them all about our slumber party... I'm sure I bored him to death but don't really care.  It was nice to talk to someone that had been where I had.
