Heather’s Super Fabulous Protein Bars =)

1/2 cup steel cut oats or dry oatmeal (I use Trader Joe's steel cut oats)
1/2 cup almond flour (also from Trader Joes)
6 scoops protein powder(I use Pure Protein 100% whey)
3 tbsp flax seeds
1 cup non-fat dry milk
1 cup slivered almonds(or whatever almonds you have)
5 tbsp natural chunky peanut butter or unsalted almond butter
1 cup DaVinci Sugar Free Flavored Syrup
1/2 cup water

Preheat oven to 325 degrees. Mix dry ingredients together. Add in peanut butter, water and almond syrup. Mix well. It will be a big sticky brownie-ish glob. Spray a 9x9 pan with nonstick spray. Spread mixture into pan. Use aluminum foil to cover edges of pan and mixture(like a shield for the edges) Bake for about 20 minutes. It should look done on top but slightly raw inside when done, as it will harden as it cools. Allow to cool and cut into 9 squares.

each square:
292 cals
16 carbs
15 fat
25 protein
5 fiber

Flavor variations:

Chocolate protein powder with Almond syrup

Vanilla protein powder with Hazelnut syrup

Vanilla protein powder with White Chocolate syrup

Cookies N Cream protein powder with Toasted Marshmallow syrup

Vanilla protein powder with Peanut Butter syrup

The possibilities are endless! Yum! Enjoy!

Your recipe sounds yummy, but it has 1/2 of my daily requirement for fats....wouldn't want to waste that on just one protein bar.....sorry!

Hi Marcia!

First of all let me say you look great in your updated pix!

Second, I have a question about your recipe, before I put everything together and make because it sounds terrific. Do the steel cut oats get cooked in this recipe in the oven? I usually have to cook mine on the stove for over a half hour to have them as oatmeal.

Thanks,

Diana ( from Bay Shore in the past )

Thanks for the compliment!

You add the oats as just one more dry ingredient... Don't cook it.

are you grinding the flax seeds?

No, they are very tiny and she puts them in whole for added crunch

You bake them with the protein powder?  I was told that the protein is "lost" in heating?  Most cannot be hotter than coffee?  Did I miss something?
