OT Pumpkin Bread

I refused to share with Kyle too!!!  (my son)..he told me to be sure to bring some of the REAL bread home with me (meaning my mom's very fattening full of sugar bread).
 She was a sweet heart and sent him home at least one small loaf just for him.

  You are very welcome to share in my bounty...How could I eat all that I made anyway.  I would bring some to support group to share too..but...I know those on liquids wouldn't like that.  So I'll save some for our post op meeting if we ever have one.  Of course you realize that you and I have them all the time!!!

Thanks for sharing....I've been wanting to make some pumpkin bread or muffins...I'll give it a try.

This is on the agenda to be made next week.  I'm going to use ff cream cheese on it tho rather than butter.  I love it on banana bread too.

Marcy, if your mother taught you to cook, maybe you can answer this for me.

I have someone with me that went to a pumpkin patch with a church group Saturday, and brought back a pumpkin to carve into a jack-o-lantern. Trouble is, he wants to make a pumpkin pie with the insides of the pumpkin.

I would think that the insides of a raw pumpkin, would have to be cooked to be equal to the innards of a can of pumpkin. Is this feasible, or should I open a can of pumpkin and try to trick him? If it is feasible, can you tell me the details of what I have to do?

I will try the pumpkin bread, as I love pumpkin and banana bread.

I can give you a tip...this will not be easy.

 My understanding is..that you need to use a real "Pie pumpkin" or they are sometimes called "sugar pumpkins".  Using a jack o lantern pumpkin, will not be the same and I think from what I have read you need to use more of them.  You have to cut the pumpkin in half...scoop out the seeds and either bake it in the over, upside down in a large pan with about an inch to inch and 1/2 of water.  Or you can boil them in water.  Then you scoop out the pumpkin and use it. 
  Since my mom's recipe calls for canned pumpkin..you may also have to adjust the dry ingredients, cause your cooked pumpkin is going to have a lot of water in it.
  You can also go to this website and it will give you step by step instructions on how to cook your pumpkin.

  I myself would prefer to use the canned pumpkin...but I have made pie with my mom before (many years ago) when she did use real pumpkins.  I do know the smaller pumpkins are sweeter.

  Good luck..oh and I have been reminded that you can substitute NSA applesauce for the oil to minimize the fat in the recipe.
